2020 bottle at Cantillon. Pours a hazy golden with medium white head that lasts. The aroma is light funk, oak, white grape, barnyard. Slick body, white grape, funk, oak, vinous, enjoyed this.

Another ‘new classic’ by Cantillon: grape lambic of which the used grapes have been partially dried in advance… Bottle shared by Johan at Cantillon, thanks! Moussy, egg-white, opening and eventually all but dissolving head, initially near-clear pure ‘old gold’ robe, hazy and warmer apricot-tinged with sediment. Aroma of medium dry sherry and very strongly so, grape skin, minerals, golden raisins, dusty attic, vague smokiness (smoking apple tobacco), tea with dried fruits. Tart onset, some astringency from grape skins and seeds, aided by lambic-y lemon sourness and sour grapes as such, but nothing too harsh or puckering; lively carb, vinous mouthfeel, like a sparkling wine with very fine bubbles. Bready core, lots of grape skin tannins with almost wry effect, but compensated by juiciness and this lovely, in this case almost herbal sherry effect; ends dry, with that smoky touch lingering about retronasally, a lot of tannic woodiness and some remnants of the initial grape sweetness lingering as well. Half-dried grapes apparently create a sherry-like aroma and taste, unexpectedly; I missed earlier vintages of this one, but I am glad I got to meet it now, this is unique and something of an acquired taste even to those familiar enough with the older Cantillon grape lambics. Unforgettable.

Clear pale orange beer, small creamy to aery off-white head, little stable, non adhesive. Aroma: funky, grapes, juicy, little funky, dry, ginger, good! MF: lively carbon, medium body. Taste: some spices, meaty, dry, herbal notes, nice stuff, I like this! Aftertaste: spicy, dry, ginger notes, good stuff, spicy character, bit yeasty, good one!

Pours relatively clear blonde. Small head fades instantly. Smell is sharp, booze-burst, yet fading fast (the boozy side, at least). Mild raisins, honey, cantillon funk (mild) . Still relatively boozy for a lambic. Taste is full, intense tartness, very dry. Clear raisins, recognizable from the few Vin Santo's i've had. Mild honey (not sweet) . very recognizable in both Vin Santo, and Cantillon lambic. Impressive balance. Medium thin body, medium high to high carbo. Lovely!

750 ml. bottle @ Pasta Madre sampled. Thanks! Thick spicy oily vinous wine, faintly cheesy grape, thick, mineral, pepper, sweeter oily oak, sparkly carbonation, very interesting & good.

Bottle at PastaMadre. Clear golden with small white head. Spicy grapes, cheesy, dank yeast, wheat, oak, white pepper, mineral.
Medium sweet and sour, soft bitter. Medium bodied with sparkly carbonation. Interesting spicy white grapes, fruity but spicy. Noice.

Near clear golden with a small white head. Aroma of big vinous notes, tart grapes, ripe grapes, light woody notes and funk. Flavour is moderate sour. Medium bodied with soft carbonation.

Swieze, chlalne, ze zlozonoscia bez szalenstw ale paleta fajna, oczywiscie winogrona, cos a la bialy pieprz? Dosc pelne w odbiorze jak na lambika, ale jeszcze mlodziutkie (z konca kwietnia rozlew). Mozna duzo wypic mysle
