Bottle shared @ Warpigs. Pours hazy dark yellow with a small white head. Aromas of yeast, vinous, tart, grassy, stone fruits, grapes, esters. Taste is tart, oaky, sweet, vanilla, lactic, acedic, grapes, stone fruits. Nice!

Bottle 750ml. @ [ Hill Farmsted Tape Take Over ] - Warpigs Brewpub, Flaesketorvet 24, DK-1711 Copenhagen, Denmark. [ As Hill Farmstead Civil Disobedience (Release 11) ].Unclear medium yellow color with a average, frothy, good lacing, mostly lasting, white head. Aroma is moderate malty, pale malt, moderate hoppy, citrus, grapefruit, moderate yeasty, barnyard - leather, saison yeast, funky. Flavor is moderate to light light heavy sweet and light to moderate acidic with a long duration, tart, funky, yeasty, fruity. Body is medium, texture is oily to watery, carbonation is soft. [20160512]

Bottle at Warpigs, Copenhagen. Poured a hazy light amber with a thin broken white head. The aroma is zesty acid citrus, yeast, dough, biscuit, some floral notes. The flavour is moderate sour with a smooth rich light alcohol citrus palate. Light bodied with soft carbonation.

Bottle @ WarPigs. Pours tiny hazy yellow with a small frothy white head that leaves some sparse trace on the glass while dissipating. Smell is tiny malty, slightly fruity and slightly funky with crackers, lemon juice, peaches, nettles, dry wood, hay, dry soil, barnyard, grape skins and lemon zest. Taste is tiny sweet, tiny sour, tiny fruity and funky. Mouthfeel is soft, round, slightly dry, slightly tart, tiny tannic astringent and light bodied. Finish is tiny sweet and slightly sour with white bread, crackers, stone fruits, nettles, funk and wine barrel character. Complex and balanced. Great stuff!

Bottle kindly shared by FX. Very hazy golden orange with a small white head. Aroma of tart light fruits, floral notes, vinous, wine barrel, woody, citrus and a beautiful soft funk. Flavour is light to moderate sour. Medium bodied with soft carbonation. Lovely stuff!

Bottle thanks to Rob. Pours a cloudy gold with small white head that diminishes to nothing. The aroma is strong brett, lemon zest, oak, citrus, funk, grape. Thin mouth, juicy, lemon, oak, brett, really enjoyed this.

Picked this up @ Hill Farmstead 2 weeks ago. Enjoyed at 40F and allowed to warm. Split 4 ways. Bottled 5/2014. Thanks Shaun.

A - Great clarity. Looks very similar to Anna, Arthur and other saisons. It lacks that shiny golden look mostly because it hasn’t sat upright very long. Poured with a 1 finger head.

S - Aroma is bursting with white grape, honey, lemon zest and some orange peel. There is a definite hop bitterness, a slight leather rope or burlap but it’s not intense.

T - Amazingly soft palate, perfect drinkability. Has all of my favorite body of Arthur, Anna, great hop bitterness. The wine barrel and microflora comes through really well. Fruity, kiwi, papaya and mango. Soft brett presence with citrus.

M - Not explosive body, a bit oily, lingering tart woody citrus notes.

O - Well, this is possibly my favorite Civil Disobedience since 4, 5 and 6. Incredible. Perfect.
