The childish and simplistic, but funny front label clearly shouts 'Omnipollo' - this is a bourbon barrel aged version of Aon Pecan Mud Cake, brewed at De Molen. Mousy, deep brownish mocha-beige, creamy but opening and thinning head, jet black robe with very thin, deep red-hued mahogany edges. Intense bouquet of a classic pastry stout with clear bourbon factor: hazelnut paste and Nutella 'choco' with a good splash of sweet and boozy bourbon thrown in, cinnamon, clear vanilla-scenting oak wood with the vanilla element enhanced by the bourbon itself, cold Irish coffee, pecan nut or chocolate cake, 'blood', Belgian chocolates, praliné, almond, hints of fresh paint, dry old liquorice, gravy, marmite, fried black olives. Densely sweet onset with a thin sourish undercurrent and a light touch of beef stock-like umami, raisins and dates, softly carbonated with a very thick, viscous, oily body. Thick layers of pecan-nuttiness, caramelly and milk chocolate- and almond-like flavours fill the mouth, showing early signs of alcohol heat from the bourbon and spicy hints of cinnamon and black peppercorns; lots of retronasal vanilla, partially from the oak wood but clearly not entirely so, while the bourbon becomes ever more clear, making for a very peppery, boozy finish with some solventy, varnish-like qualities. The sheer pecan-nutty and chocolatey thickness of the beer absorbs a lot of this booziness and solventiness, but not all of it, making me wonder if it wouldn't have been a wiser choice to let it rest for some months. Bit too boozy in the mouth for me, but the nose is utterly divine - if you like a good pastry stout every now and then - so that makes up for a lot.

Bottle from Holiday Market. Pours a thick, viscous black with a smidgen of head that dissipates quickly. Big brownie batter nose with bourbon, oak, toasted almond and creamy vanilla aromas. Thick and full bodied on the palate...rich and decadent. Not as sweet as the regular Aon. More oak, cacao nib, fudge, baker's chocolate and vanilla with bourbon undertones. Everything comes together very nicely.

330 ml bottle into snifter, 2019 vintage bottling. Pours dense pitch black color with a thin tan head with decent retention, that reduces to a minimal ring of lace. Minimal spotty lacing on the glass, with a light amount of streaming carbonation. Aromas of huge milk/dark chocolate, cocoa, coffee, pecans, caramel, brown sugar, fudge, brownie batter, toffee, vanilla, bourbon, coconut, toasted oak, biscuit, and dark bread; with lighter notes of molasses, licorice, dark fruit, smoke, oak char, leather, herbal, grass, pepper, and yeast/roast/toast/oak earthiness. Minimal booze in the aromas as it warms. Amazing complexity and balance of dark/roast/bready malts, pecans, bourbon barrel, and light earthy hop/fruity yeast notes; with big strength. Taste of huge milk/dark chocolate, cocoa, coffee, pecans, caramel, brown sugar, fudge, brownie batter, toffee, vanilla, bourbon, coconut, toasted oak, biscuit, and dark bread; with lighter notes of molasses, licorice, dark fruit, smoke, oak char, leather, herbal, grass, pepper, and yeast/roast/toast/oak earthiness. Very minimal herbal, grass, roast, char bitterness; and bourbon/oak spiciness on the finish. Lingering notes of milk/dark chocolate, cocoa, coffee, pecans, caramel, brown sugar, fudge, brownie batter, toffee, vanilla, bourbon, coconut, toasted oak, biscuit, dark bread, light molasses/licorice/dark fruit/smoke/char, leather, herbal, grass, pepper, and yeast/roast/toast/oak earthiness on the finish for a while. Amazing complexity, robustness, and balance of dark/roast/bready malts, pecans, bourbon barrel, and light earthy hop/fruity yeast flavors; with a solid roasted bitter/sweet and bourbon/oak spiciness balance; with no cloying sweetness after the finish. Slightly increasing dryness from lingering bitterness and bourbon/oak spiciness. Light-medium carbonation and very full body; with a very smooth, creamy/silky/velvety/bready, lightly slick, and slightly sticky/chalky/tannic mouthfeel that is fantastic. Minimal warming alcohol for 11%, with zero lingering barrel booze after the finish. Overall this is an insane barrel aged flavored imperial stout. All around amazing complexity, robustness, and balance of dark/roast/bready malts, pecans, bourbon barrel, and light earthy hop/fruity yeast flavors; very smooth and dangerously easy to sip on for the big ABV, with the mildly bitter/drying finish; amazingly soft/silky feel for the ABV. Perfectly balanced super rich malts, flavorings, and bourbon barrel presence/integration. Not overly sweet/heavy with lingering dryness. A highly amazing offering, and world class quality style example. Did not prefer over the base beer, but met all expectations.

Bottle shared from Sterk, Amsterdam. Black with a small beige head. Aroma of rich dark chocolate, huge cocoa, caramel, oak, toffee and vanilla. Flavour is heavy sweet. Full bodied with soft carbonation. A little artificial but not too far down that route.
