This blend of spontaneously fermented beer is aged on local raspberries. We begin brewing Coolship Red with Pilsner malt, 40% raw wheat, and aged whole-leaf hops. The unfermented wort is then transferred to a large shallow pan called a coolship, which allows the hot wort to mingle with wild yeast and souring microbiota in the Maine air. After fermenting and aging in French oak wine barrels for over two years, we add raspberries and let it rest for an additional four to five months. The finished beer is bright red in color with an aroma of raspberry and oak. Its raspberry-forward flavor is balanced by notes of light funk, apricot, and a tart, dry finish.

Bottle pour at St Gambrinus. Pours bright clear red. Raspberry, sweet raspberry jam, funk, red wine vinegar, red currant, lingering acidic finish. Medium body. Good.

Shared from bottle thanks to Maakun! Hazy coral red with no head retention. Fruity and Cantillon-like nose and aroma’s. Raspberries, fruitstones, cherries, brier, grapes, rose and white wine. Lactic sour. Hay, barnyard, cobwebs. Big fruity sweetness, quite strong sour and fruitstone bitter. Medium body, minerallike and fruitjuice feel. Very tasty, very fruity.

Bottle shared. Hazy dark pink to light red with light pink fizzy head that leaves no trace. Lots of tart raspberries, soft red wine, oak, hay, funk, light lactic. Quite fruity and lots of hay, but also light cellar dank funk, and some sweet milky notes. Medium sour and some underlying sweetness, with soft bitter grassy finish. Medium bodied with fizzy carbonation. Very nice, close to Cantillon Rosé, though slightly more lactic and vinous and less fruity. Well done

Trübes orange rotes Bier mit einer geringen weißen schaumkrone. Geruch sehr fruchtig, rote Beeren, leicht säuerlich. Geschmack nach grapefruit, rote Beeren, leicht säuerlich, kratzig.

Pink grapefruit color with big white head. Aroma is raspberries, fresh-funky. Taste is raspberry, lacto, yoghurt, so fruity. Dry and sour. A bit overcarbonated. Could be a masterpiece if it weren’t for the high carbonation.

Bottle thanks to Team Boston. Pours a cloudy ruby copper with small off white head that diminishes to nothing. The aroma is strong cherry skin, funk, oak. Thin mouth, very tart, cherry, oak, high acidity, good.
