A full malt barley wine of 13% by volume, which is brewed once a year; fermented with beer and wine yeast.

With L’ensemble we find the limit. Not only the boundary of the maximum possible, because 13% is extremely heavy for a full malt beer. But also the boundary between beer and wine, because to get this amount of alcohol, a part of the fermentation uses wine yeast. Brewing and fermenting this unique beer requires much time and attention. Partly because we make this beer only once a year and comes on the market when it becomes winter season. A perfect companion to the Christmas season! Deliciously warming.

17 February 2023. At Rose Red, Bruges. Cheers to Anke, mom & dad!

Hazy dark amber, small, off-white head. Aroma of date, candied plum, raisin, pear syrup, caramel, liqueur, green tea, sugared peanut, sweet cherry, cranberry sauce. Taste has very sweet cherry, date & raisin going into a thick malty profile of pear syrup, caramel & brioche, slightly herbal. Peppery & herbal hoppy finish, lending some bitterness against an ongoing sweetness of candied fruit, brown sugar, wet wood and warming liqueur-like alcohol. Full body, syrupy texture, average carbonation. Delightful dessert beer.

Bottle. Reddish dark brown color. Malt, dried red fruit and floral grassy hops in the aroma. Full bodied, thick mouthfeel. Well balanced mix of malt, dried red fruit and floral herbal hops. Soft and silky. Alcohol noticeable but not dominant. Well balanced, tasty barley wine.

A no-nonsense but very good barleywine. Thick, loads of malt, some sweetness but not sticky. Warming and rich, upon warming it opens up with some dried fruit, and something herbal. Exceptional balance.

500ml bottle; BB July 19. Poured (twice) into an old 'forbidden fruit' chalice at home on 25th Jan 19. What a lovely drink. Rich and malty from start to finish, semi-sweet and alcoholic in nature. My sweet tooth took to it straight away. Brandy/fortified wines in the malty aroma and taste, some woody flavours too. Smooth, slick bodied, almost oily in nature. This really is a wonderful beer, glad I didn't share it with anyone!

Very dark brown with thin head. Aroma and flavour have a tonne of sweet, bready malts. Dred fruits. Sugars. Thick and oily. Very warming and rich feeling.

Draft - Dark caramel, raisin and some dark fruit. Deep amber brown with a decent beige head. Sweet dark sugars, a little burnt with a long raisin and caramel finish.

Bottle 2015 shared at home. Murky brown with lots of yeast clumps and small beige head. Milk chocolate, dark red wine, sherry, lots of sweet malts, chestnut, walnuts. Over medium sweet and bitter, very light sour, with a long lasting bitter finish. Full bodied with soft carbonation. Bit disappointing actually, though certainly not bad.
