This particular Framboos has macerated for 5 months. The final fruit intensity is 37% (so 370 grams of fruit per liter of finished Framboos). The summer raspberries are hand-picked and cultivated organically by Ferme Framboos.

3 Fonteinen Framboos is the result of macerating hand-picked whole raspberries on young lambic for at least four months, in a proportion of one kilogram of fruit per litre of lambic. The raspberry lambic is then blended again with more young lambic to obtain a minimum intensity of 35% fruit, and is bottled immediately afterwards. These bottles are then stored in our cellars for at least five months so that the raspberry lambic can develop into a beautiful, traditional, and refined Framboos. With an abundant forest fruit nose as it warms in the glass, 3 Fonteinen Framboos will age perfectly but may lose some of the vibrant colours and forest fruit aromas. This unfiltered and unpasteurised lambic is all-natural with no artifcial juices, syrups, or sugars added. Traditional Lambic is living, cultural heritage rooted in the Zenne valley!

In the rolling hills around the valley of the Dijle and Laan
rivers, in the beautiful Sint-Agatha-Rode (Huldenberg),
south-east of Brussels and close to Leuven, is where
Ferme Framboos is situated. Owner Jan Butaye focuses
on berries, particularly on raspberries, blackberries, red
currants and strawberries.

Sampled as my first 'Bio Frambozen' framboos by 3F. Or course no-one will tell the difference in taste between organic and regular raspberry's in a beer, but in line with other entry's, we recently decided to split these up into regular, and organic anyways. I guess the review difference will be more batch-like than different beer-like. Anyway. Blend 16 of 17/18 , bottled 17-01-2018 - sampled on 10-01-2021 , so roughly 3 years in bottle.
Pours a dark copper amber, not as red or pink as expected. small white ring of persistant head. Scent is earthy, complex, intense wood, damp cellar, rough lambic funk. Taste is full, intensely tart, Medium acetic acid, but not overkill. Raspberry aroma is quite fine (already after 3 years, it seems to be quite less than usual) . Much funk, some lemontartness, strong wood presence. The essence of the fruit still remains though. Dry, acetic finish. Decent, not as fruitforward as I had hoped.

Bottle shared on the roof. Hazy rusty rose with no head. Massive sour and fruity raspberries, red berries, rose fruits. Bit old and rusty, but nice nonetheless. Medium body, mineral, blood iron, rust, fruit pulp.

Bottle shared thanks to sjogro at his birthday. Dull pink color. Lots of jammy raspberries, dull funk, lemon, red currants. Over medium sour. Nice blend, not super sour. Looks have really faded though.

Pinkish red. Dark raspberry marmelade nose. Jammy funky. Sour sour raspberry. Acidic. Lovely.
