75cl bottle (5,5%; vintage 2021; BBF: Feb, 2026) from Cora in Brussels. F: some bubbles. C: deep gold, hazy. A: sour fruits, green plums, woody, funky, bit Sulphur, orange, peach. T: medium malty base, sour fruity, sour plums, woody, bit puckering, funky, old lemon, rose wine touch, almost no carbonation, not bad not great yet enjoyed for sure.
Golden colour with no head or carbonation. Aroma is a bit old and cheesy. Flavour is exceptionally sharp and tart. Plum skin is noticeable for me. Nice acidity. Would like this with additional fermentation and carbonation.
0,375l bottle at home. BB 02/2021. orange very hazy color, basically no head. smells weird, smoke, earthy, grassy, citric, some tea aroma, peppery. bit weird smell, I like the smoke notes, but smells a bit off. medium body, no carbonation. tastes of plums, honey, ginger, earthy, bit peppery, sake yeasty kind of taste, peppery. finishes dry and lightly sour with notes of ginger, honey and peppery notes. gets very gingery / honey forward once it warms, I actually quite like the taste, very nice one.

Weird aroma, ume loads, but also woody, earthy. Quite flat. Ume Boshi taste overwhelming. But good stuff. Smoked cheese!!
2013 bottle. Golden color. Plums dominating the aroma. Moderately sour flavor with lemon and a hint of oak. Plums especially noticeable in the finish. A delicate, very nice fruit lambic.
Bottle (from koht). Pours golden. Aroma is carrots, fruits, salted fish. Flavor is sour, fruits, salted fish, plums. Finish is sour. Overall: drinkable.
