New ‘wild ale’ by Totem, brewed – according to Klaas, the brewer, himself – with a wild strain of some or other Saccharomyces he ‘caught’ in his own garden by letting apples ferment… At Goeste in Ghent. Cobweb-lacing, egg-white, slowly opening, moussy head over a murky peach blonde beer with ochre-yellow hue. Unexpectedly elegant and surprising bouquet of sweet white grapes, orange peel, marzipan and coconut from the rosewood, ripe melon, white port, wet hay, soggy white bread, apple peel – very different from the Brettanomyces-referemented wild ales we all know and love… Estery onset, grape, pineapple, ripe pear and peach notes, sharpish and initially somewhat stinging carbonation, supple bready malt base, retronasal esters of this wild yeast strain returning with those unexpected, deliciously perfumey rosewood notes of coconut, tonka bean and melon, spicy phenolic aspects blending well with a bright, Cascade-induced orangey quality providing some soft, balancing end bitterness as well; earthy yeastiness in the end too, but in a restrained kind of way. Complex, hugely fascinating experiment which worked out remarkably well – truly unique even in the country that basically kept wild and sour ales alive before the advent of the craft beer movement, with the rosewood adding a truly seductive tropical refinement to the bouquet, I am left wondering why this ingredient isn't used more often (price could be a reason, I guess). This is not only brilliantly original, but highly delicious as well (and my girlfriend’s favourite of the three new Totems tasted at this occasion in Ghent) – another testimony of Klaas’ genius as an innovative brewer, perhaps the greatest and most inspired of all the new, young craft brewers in Belgium.

Very cloudy orange to beige beer, creamy dense off-white head, little stable, non adheisve. aroma: malty, some caramel, bit fruity, some citrus notes. MF: ok carbon, medium body. Taste: lots of citrus, pretty dank hops, bit resinous, some grapefruit, lots of oranges, orange peel, some banana peel, bitter, nice. Aftertaste: some tropical fruits, ripe papaya, some pineapple, pretty dank, nice stuff, bitter finish, orange peel. Nice stuff. Not sure where the Palo Santo comes into play, the wood was much more pronounced in the stout.
