Cantillon Cuvée Saint Gilloise is a two year old lambic that is dry-hopped and bottled with a small amount of sugar-liquor to begin refermentation in the bottle. The dry-hopping happens in a stainless steal tank prior to bottling. It is bottled yearly in 75cl bottles, but has been available in 37.5cl on at least one occasion in 2010 and on tap at various locations. Cuvée Saint Gilloise is the successor to Cuvée des Champions and generally thought to be of the same line of lambics. The name and color scheme for the labeling is derived from the Royale Union Saint-Gilloise, a Belgian football club originally located in the municipality of Saint-Gilles, in Brussels near Cantillon. In 2013, Cantillon made a special bottling of Saint Gilloise in both 1.5L and 3L bottles for people who owned or purchased season tickets for the 2013-2014 season. Saint Gilloise is widely believed to be dry-hopped with Hallertau hops however Jean Van Roy confirmed that the hop varieties change based on availability and as they have sourced hops from different providers

Bottled 27.12.2017. yellow clear color, medium big white head. smells apple cider, minerals, grassy, hay, very lively, cellar notes, nice amount of funk, tad vinous, very nice smell. full body, pearly carbonation. tastes citric, grassy, funky, earthy, herbal, bergamot notes, hay, bit flowery, esters. finishes light to medium bitter with a subtle sourness and notes of hay, herbs and flowery notes. lovely one, great balance and very smooth to drink.

Rerate 03.09.2023: 0,25l from tap at Moeder Lambic Fontainas. Amber cloudy color, small white head. Smells earthy, hay, dusty, peppery, grassy. Very nice smell.
Full body, soft carbonation. Tastes grassy, earthy, peppery, herbal, some oak, nutty. Finishes dry and medium bitter with notes of grassy, earthy and peppery notes. Very nice one, rather bitter, great balance though

750ml bottle at Austrian RB Meeting in Linz shared by Sebilinz, many thanks. As Cuvee Saint-Gilloise. Bottled 01/2015. orange / light amber cloudy color, obvious carbonation. medium big white head. smells sour, wood, funk, peach, cork, citric notes. light to medium body, obvious carbonation, light mouthfeel. tastes sour, funk, some wood, peach, grass, herbal, citric, a bit leathery. finishes sour, quite dry and with some funk and wooden notes. overall a tad too dry / sour for me. but still drinks well.

Smells funky, earthy, grassy, dusty. nice to very nice smell. full body, soft carbonation. Tastes grassy, earthy, citric, dusty, bit funky, stone fruits. Finishes lightly dry and light to medium sour with notes of grassy, citrus and oranges. very nice, very smooth

Bottle. Thanks to Seth for sharing this one. Yellow pour with a white head. Funk and lemon zest bouquet. Loads of funk, muted lemon zest, and barrel highlights. Wet hay and straw backbeats. Good body and mouthfeel.

Wonderfully tart, quite dry, and a nice crispness. Another fantastic one from Cantillon, never seen this one before.

2019 bottle shared at Jimmy's farewell party. Pours a clearish honey gold with a finger of white foam that lingers. Musty hay, horseblanket, and notes of dried honey all present on the noses. Palate is similar with light notes of pear, herbs and stonefruit. Drying on the finish with acidity held in check. Very nice.

Tap at blb. Pours a cloudy blonde, relatively big white head ( very big for a Lambic, which makes scence because of the extra hops.). Scent is typical cantillon fink. Very grassy, herbal, vegetal fresh grass and twigs like hops. Taste is full, medium intense sourness, with a bit of a bite by the bitterness in the back. Hops are relatively gentle, which is obviously very intense for a lambic though. Like the scent, they express a grassy, twig, herbal note. Still very decent beerw but still not my favorite cantillon.
