The Lou Pepe Gueuze is a blend of three different 2-year-old lambics. The standard Cantillon Gueuze is a blend of 1,2, and 3-year-olds. The inclusion of the younger lambic (which still has some unfermented sugars in it) sparks a refermentation in the bottle that gives Gueuze its famous champagne-like spritziness. The simple idea behind the special Lou Pepe blend is that it should have much more of the taste of old lambic, which is of course much harder, drier, more sour, and more complex than the young stuff. (Though 3-year-olds are generally more complex than 2-year-olds, it's not necessarily so; the 2-year-olds used in this instance have as much character as most 3-year-olds.) This being Gueuze, it has to be spritzy, so the brewery opted for the same method used in conditioning champagne: everyday refined sugar is dissolved in water and added to cause a refermentation. The sugar ferments out completely, so there is no residual sweetness, which Jean-Pierre famously detests.

’08 vintage bottled in ’11. Cloudy yellow pour with a decent white head. Lemon, grass, funk, and wet hay aromas. Lemon, apricot, tangerine, and brett notes. Dry with mild tartness and good carbonation. A bit acidic with wonderful balance.

0.75 l bottle from 'De Bierkoning', 2013 vintage, bottled in April 2015, cellared for almost four years, consumed on Christmas Eve 2019. Almost clear, orangeish amber with a thin, slightly fluffy, slowly diminishing, white head. A bit sweetish, sourish-fruity, gently funky aroma of old lemon, oak, horse blanket, a touch of quince and traces of leather. Just a little sweet, quite sour, gently funky and rather fruity taste of old lemon, quite some horse blanket, leather, oak and a touch of gooseberry, followed by a medium long, fairly tart, rather woody-dry, funky finish. Medium body, slightly astringent, spritzy and gently effervescent mouthfeel, soft carbonation. Very tasty and well-balanced Gueuze, a real pleasure.

Bottle shared at Fermentoren, Copenhagen. Pours hazy peachy orange with a medium white head. Aromas of green apples, vinegar, light tannin, fun, straw, barnyward, tart fruits, light cheesy notes. Taste is sour green apples, vinegar, light wheat, funk, peppery notes, lots of barnyard and some tannin.

Bottle at home, 2006 version. Clear golden colour with very little bubbly head. Aroma is sour, flat creaminess, nice fruitiness, nice mustiness too, horse blanket! Taste is lovely. Bit of citrus, creamy, bit herbal, touch of grapefruit, gooseberry maybe. Initial sourness, then the creaminess, then musty and bit sour finish. Really nice. Perfect for my Xmas day treat. Finally I got hold of this beer. Vintage 2000. Aroma has oak, grapes, some hops and grapefruit, The flavor is stronger and even more complex. A good deal of sourness, but not overwhelming. Even a hint of sweetness present. I found so many flavors. Honey, oak, grapefruit, grape juice, banana liquor, pineapple. A magnificent and immensely complex beer in all aspects. Less assertive as the "normal"Cantillon geuze, but makes that up in finesse. A worthy # 1400!

(Vintage 2003) 0,75l bottle at home. Bottled 2006. dark yellow clear color, small white head. smells herbal, grassy, berry notes, light sweetness, elder flowers, lovely smell. medium body, soft carbonation. tastes earthy, grassy, bit flowery, elder flowers, citric, hay, wood, hints of some herbs, spices. finishes dry and lightly sour with notes of hay, elder flowers and some spicy notes. very very nice one, great balance, so smooth to drink, superb 9, 4, 9, 4, 18
