New Totem stout, flavoured with rosewood (chips) – must be a first for Belgium. Draught at Goeste, cheers Klaas! Lacing, medium thick, pale yellowish beige head, quickly opening under influence of the alcohol (around 15% ABV…) but relatively stable, over a black beer with chocolate brown, hazy edges. Lovely, intense, perfumey bouquet of Belgian chocolates and warm caramel sauce, indeed a strikingly expressive and ‘tropically fragrant’ aspect of aromatic exotic wood which must be the rosewood but resembles tonka bean or coconut as well, kahlua, rum-soaked raisins, walnut oil, salmiak. Sweet onset, lots of candied dates and raisins, fig compote, with a sourish undertone; thick, oily mouthfeel, softly carbonated, bit resinous. Big pecan-nutty and expressively chocolatey malt body with a toasted bittering finish, but, as the nose already announced, beautifully coloured with an aromatic, exotic retronasal aroma of strong rosewood, lifting the whole beer up to a higher level. Some drying woody tannins, lingering roasty and black chocolatey malt bitterness and warming port-like alcohol add further complexity to the finish, with a late spicy hop bitter note. Fantastic stout, with a combination of both bold originality and refined technical quality that is rarely seen outside of the Anglo-Saxon world and Scandinavia. Could well be the most ‘decorative’, interesting and alluring stout so far made in Belgium.

Sample at ZBF 2018, thanks Belgian RB table. Only Palo Santo beer I've ever tried was the infamous Dogfish Head Palo, what a beer it was, and Totem creates the same craze.

Thank you for sharing RB People! Sampled draft @ ZBF 2018. Black mocha head. Nose is massively thick sugar, syrup, molasses, treacle, mocha, caramel & complimentary anis. Taste is massive chocolate, Palo Santo giving notes of sweet bark, cinnamon, medicinal syrup, vanilla, coconut etc. massively sweet balanced with liquorice, herbal bark & almost dah of Pastis. Pure syrup, massively thick body. Warming, close to boozy but luckily not. After WInterkoninkske Grand Cru this is the best Belgian Imperial Stout currently, massively better than the current disappointing hollow ghost versions of Black Albert. Amazing & very unique beer.

Tap. Hazy brown color with beige head. Aroma is herbal, rosemary, coconut, anis. Taste is herbal, liquorice, coconut, anis. Oily mouthfeel with medium carbonation. Very well-made, though a bit too spiced for me.
