Cependant le produit obtenu est très différent. Le jus moins fruité laisse percevoir succinctement l’astringence de la poire en fond de bouche.
Le poiré est une boisson acidulée voire vive moyennement sucrée et peu tannique.
C’est une boisson idéale pour accompagner les produits de la mer : il laisse ressortir la puissance de l’iode tandis que sa douceur gomme la salinité de l’aliment.

75cl bottle from Gamm Vert. Pours golden yellow with a faint mist. Lots of enthusiastic bubbles rising to the top. Aroma is sweet perry pear. Spritzy on the palette, a touch oily with elegant perry pear fruit, a touch syrupy, a little drying. Nice spritzy poiré.

Bottle from the farm-shop in Saint-Gratien. Fruchtig-Birnig, mild. Erstaunlich viele Tannine. Frisch, leicht weinige Note. Intensiv, moderater langer Nachgeschmack. Lecker fruchtig trocken.

Many thanks to Tim for sharing.Fresh Perry aroma. Smooth, not too sweetish. The Violett is fine and smooth in the aftertaste, floral, smooth. Hints of wine, round and smooth, floral and fresh with a smooth winey sweetish Perry aftertaste. Nice.
