3 Fonteinen Blackberry is obtained by maceration of hand-picked blackberries on young traditional lambic, for at least four months, in a ratio of one kilo of blackberries per liter of traditional lambic. The fruit lamb is then assembled with young lamb and everything is bottled, and the fermentation continues in the bottle. The result is a special blackberry lambic beer, with an intense forest fruit bouquet and with evolution in the glass. Natural fruit, without the addition of juices, syrups, or sugars. Unfiltered and unpasteurized.

Pours very dark amberblonde. Small white head. Smell is full, funky, woody, intense, midlly herbal. Taste is full, tart, very oaky, intense, fruity. Nice, but not as great as some other 3F.

75cl bottle (bottled 12/02/19, BBF: 26/10/39, Assemblage n˚ 38, 6,2%) @ 3 Fonteinen lambik-O-droom (visited 29/11/2019). F: big, light pink white, almost good retention. C: coppery red, clear, hazy after pouring rest of the bottle. A: a lot of 3F funky, blackberries, light sour fruity, woody, barnyard, brett, bit green plums, lemon touch, gooseberries, bit old bread. T: nice sour fruity, bit blackberries, woody, funky, bit puckering, lemon, bit barnyard, not offensively sour yet very refreshing, bit red berries, almost fruity juicy feeling, soft carbonation, very good balanced, fully enjoyable for me.

Carefully prepared in the ongoing Spelingen van het Lot series, 3 Fonteinen now presents this 'final' blackberry lambic, only sold so far in their winter pack and for on-site consumption at Lambik-O-Droom. Had this from a bottle there labelled Assemblage n° 38 - seizoen 18/19; contains 75% 3 Fonteinen lambic and 25% Lindemans lambic. Thick and frothy, off-pinkish-white, fluffy, papery lacing and remarkably stable head on a misty deep vermillion red beer with dark fuchsia hue. Aroma of dusty attic and sawdust, evidently strong blackberries in a very 'real' and somewhat green way with blackberry bushes in the background, blackberry wine somewhere, small sour plums, old lemon rind, damp earth, humus, fried tomato peel, moist decaying wood, grape skin, some musty Brett effects and a vague background touch of old cheese. Sour onset, obvious fruit acidity from the blackberries and slightly puckering, but still far less so than expected and more of a refreshing, minerally character, mellowed a bit by the sheer juiciness of the berries, mingling with lambic esters (unripe plum, sour grape, hard nectarine); high effervescence, almost a bit cava-like but fit for a fruit lambic, tart lactic sourness over a supple, bready 'soil' continuously drenched in blackberry juice. Dusty and very tannic berry seed and wood effects make for a bone dry ending, very fruity as well, with light hayish and musty Brett aspects - but it really is the fruit that shines here. Ends with astringent tannic dryness, lots of berry juiciness and sourness and a lovely retronasal effect of hand-picked blackberries straight from a bush in some or other forest. Bright, complex, tannic and minerally while still remaining supple and refreshing, this is yet another beautiful new generation 3F product - but I was not expecting anything less. Too bad this one - and the four now 'independent' peach lambics - aren't distributed on a wider scale (yet?).
