MINE 峰 (meaning “mountain ridge” in Japanese) is a capstone to our "inspired by" series of beers, which seek to honour those that formed our earliest sense of what beer could be. This particular pale ale pays homage to Sierra Nevada Pale Ale. Ours is a "S.M.A.S.H." beer, meaning single malt, single hop, but its flavour profile evokes much more than the sum of its parts. Two-row pale malt and 100% Cascade hops form its basis and present as grapefruit pith and pine in the flavour and aroma. In lieu of adding a bit of crystal malt, we decocted the mash for 4 long hours, adding a pleasing level of malt depth and body that braces the beer's bold, refreshing finish.

Tap @ Goodbeer Faucets, Shibuya. Nice darker gold. Nose is not aggressive at all, rather malty, light hops. Tastes malty as well, hops are strong but superbly balanced, light fragrant and extremely drinkable. Pleasant.

Light amber color. Apricots and citrus notes jump out. Decent malt backbone, excellent balance. Crisp sharp bitterness. Very SNPA-esque. Very good.
