We’ve never released a Bourbon Barrel version of our Judgment Day. So we thought it might be interesting to take the base beer for Cuvee de Tomme age in first fill Bourbon Barrels and let mother nature take over. Of course, because this is a Rock and Roll inspired Box Set beer, we couldn’t just leave well enough alone. Upon sampling the base beer, it became apparent that the raisins used to brew the base beer were going to drive the flavor bus of this beer. The conversations turned to Oatmeal Raisin cookies and the essence of a freshly baked treat. So we added some cinnamon sticks to the barrels and threw in some dried chiles as well.

Bottle @ Dangerous Bottleshares #whoknowshowmany. Pours muddy brown with a small offwhite head. Aromas of bourbon, dark fruits, cinnamon, vanilla, chocolate. Taste is bourbon, chocolate, vinous, malt, dark frutis, vanilla, booze.

Bottle. Hazy brown color with beige head. Aroma is caramel, chocolate, raisins, cinnamon indeed. Taste is cinnamon stick, raisins, chocolate, a bit of a chili catch. Silky mouthfeel with high carbonation. A bit overattenuated, but that's part of the style I guess.

Bottle. Boozy bourbon aroma. Cloudy dark brown, medium full chewy, light foam, orange peel, a bit booze, alright bourbon, almond, nice pralines, a bit cherry, sparkly finish.

Bottle. 14%. Color: Very dark ruby, almost black. Beige head. Aroma: Sweet Bourbon, spicy. Taste: Starting caramel malt, toffee, pretty strong yet well balanced sweetish Bourbon, vanilla. Notes of Chiles, sweet chocolate, hints of cinnamon, raisins, roasted coconut. Over medium sweet, average bitterness. Warming mouthfeel, mostly because of the pepper, maybe also some booze. Long lasting finish. Full body, below average carbonation. Sticky mouthfeel. Very nice, complex and well balanced.

375 ml bottle into snifter, 2018 vintage bottling. Pours nearly opaque dark brown color with a small fairly dense and fluffy light khaki head with good retention, that reduces to a thin spotty lace cap that lingers. Nice spotty lacing clings on the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of big lightly tart raisins, plum, prune, cherry, fig, date, peach, pear, apricot, red apple, red grape, caramel, brown sugar, toffee, cinnamon, chili pepper, peppercorn, vanilla, bourbon, coconut, toasted oak, nuts, and brown bread; with lighter notes of molasses, licorice, milk chocolate, cocoa, coffee, leather, tobacco, herbal, grass, and yeast/oak/toasted earthiness. Increasing booze in the aromas as it warms, but not overwhelming. Damn nice aromas with great balance and complexity of fruity/spicy yeast, raisins, spices, dark/bready/light roasted malts, and bourbon barrel notes; with great strength. Taste of huge lightly tart raisins, plum, prune, cherry, fig, date, peach, pear, apricot, red apple, red grape, caramel, brown sugar, toffee, cinnamon, chili pepper, peppercorn, vanilla, bourbon, coconut, toasted oak, nuts, and brown bread; with lighter notes of molasses, licorice, milk chocolate, cocoa, coffee, leather, tobacco, herbal, grass, and yeast/oak/toasted earthiness. Light-moderate peppery yeast, cinnamon, chili pepper, bourbon/oak tannin spiciness; and light herbal/grassy bitterness on the finish. Lingering notes of tart raisins, plum, prune, cherry, fig, date, peach, pear, apricot, red apple, red grape, caramel, brown sugar, toffee, cinnamon, chili pepper, peppercorn, vanilla, bourbon, coconut, toasted oak, nuts, brown bread, milk chocolate, cocoa, coffee, leather, tobacco, herbal, grass, and yeast/oak/toasted earthiness on the finish for a while. Incredible complexity, robustness, and balance of fruity/spicy yeast, raisins, spices, dark/bready/light roasted malts, and bourbon barrel flavors; with an awesome malt and yeast/oak spiciness balance; with no cloying/astringent flavors after the finish. Light-moderate increasing dryness from yeast/oak spiciness and carbonation. Medium-plus carbonation and medium-full body; with a very smooth, creamy/silky/bready, fairly sticky/tannic, and slightly slick balanced mouthfeel that is great. Mildly increasing warmth of 14%, with minimal barrel booziness lingering after the finish. Overall this is an incredible barrel aged fruited/spiced quad! All around fantastic complexity, robustness, and balance of fruity/spicy yeast, raisins, spices, dark/bready/light roasted malts, and bourbon barrel flavors; very smooth and dangerously easy to sip on for the huge ABV, with the modestly spicy/tannic/drying finish. Perfectly balanced fruity/spicy yeast, spices, raisins, rich malts, and bourbon barrel integration. Not overly sweet/heavy from lingering dryness. A highly enjoyable offering, and amazing style example for the big gravity.

Sampled at Ace&Kees! festival. Clear dark reddish brown with dark beige head. Lots of bourbon, raisins, light herbs, sweet malts, eau de vie, light spicy 🌶, soft cinnamon and earthy herbs. Quite sweet but also boozy bitter. Almost full bodied with oily feel and under medium heat.

Bottle. Nose is minerals, chocolate, cinnamon, vanilla, some chili. Dark brown, hazy, flat. Nice cinnamon in the flavor, peppery, tasty. Has the right amount of spicing and chili to balance the sweet malts.

Bottle at SBWF 2017. Dark brown, unclear, with a brief beige head. Raisins are very dominant with some bourbon, toffee, prunes and vanilla. Some cinnamon and chili shining through as well. Light alcohol burn. Solid.

Tasting at Tokyo Midtown. Pours dark brown, somewhat cloudy. Nose has some amazing bourbon soaked raisins, some toffee and prunes. Not too sweet though. Christmas starts with the first sip, lots of cinnamon, vanilla, nutmeg and other Christmas spices in the flavour, prunes and dried plums there as well. Booze is kept in control, beautiful sipper.
