EB from earlier this week. Paired with sous vide charred moose, mashed potatoes and parsnip, fried Brussels sprouts, smoked pork and red wine sauce. Very heart pairing that works like a charm. Deep dried fruitiness in the beer works nicely with the food.

75cl Bottle @ monthly tasting, Chez Sophie, August 20. Brought by me. Dark appearance with deep tan head. Lovely rich aroma encompassing vanilla, chocolate and almond. Seems like the barrel-aging has transformed the Chimay blue into something quite spectacular, excellent vanilla shades perhaps even a hint of coconut, smooth luxurious raisin-strewn dark malts, great balance. Reminds me more of a good barrel-aged La Trappe Quadupel than Chimay. Very good indeed.
Bottle @ home. Chestnut brown/reddish colour. Nose of vanilla, wood, dried fruit, sweet malts. Rich and malty, sweet, light herbal. Very nice after 5 years. I don't like Chimay fresh, but with some age this is a glorious beer.
Bottle shared with Koelschtrinker, Beerhunter111 & Zlotta. Intense deep and fruity beginning. Deep, red fruit, soft with bitter and woody hints. Very rich, deep and round. Mild round, red fruit, nice woody aftertaste. Nice.
Bottle shared with Zlotta and Koelschtrinker. Trübes dunkel orange goldenes Bier mit einer mittelgroßen beigen Schaumkrone. Geruch nach Vanille, holzig süß, reife Früchte, Eiche. Geschmack ist holzig süß, Vanille, Karamell, leicht hohe Karbonisation.
Sampled from 0.75 l bottle, best before 2020. Slightly hazy, brownish red with a medium large, frothy, almost stable, beige head. Sweetish, moderately fruity and slightly yeasty-spicy aroma of prunes, raisins, oak and some caramel. Sweetish, malty, slightly fruity and rather yeasty-spicy taste of caramel, raisins, prunes, marzipan, oak and some red grapes, followed by a medium long, moderately bitter, rather yeasty-spicy, woody-dry and slightly vinous finish. Medium body, very effervescent mouthfeel, lively carbonation. Very nice, not great though.
Erhöhte Karbonisierung. Weich würziger, dunkel malziger Start. Holzig, milde Schokoladennoten, angesichts des Alkoholgehalts eher mild. Mild holzig-bitterer Hintergrund, vollmundig, langer karamellig alkoholischer Nachhall. 9/10/10/9/11/10
Bottle at home, Dark red brown beer, medium head. Aroma is red fruit, alcohol, some wood/vanilla. Taste is the same, very nice, maybe could live some longer.
Bottle (from sip). Pours dark amber. Aroma is sweet, dark fruits, malt, apples. Flavor is sweet and bitter, fruits, sugar, raisins, caramel, malt. Alcohol is somewhat noticeable, but not distracting. Overall: very good.
