Wild bitter ale with local Cascade.

A thatched farm with an old horse barn, a handful of goats in the meadow, an orchard with yellow fruit trees behind the house, humid hay stacks in the distance and hop vines in the hedge. Scents of the countryside, an open-hearted temper, a beer without ornaments but with truly honest ingredients: that is Erve, our wild cross between a brett IPA and a saison.

Erve is a rustic, dry and bitter beer, with a notable palate of locally grown Cascade hops that give warm notes of stone fruit and citrus. We use whole hop cones because we love their pure and intense flavours and bitterness. Our wild house culture creates a rural and fruity character that is underlined by locally grown heirloom grains.

Bottle, thanks Dave! Hazy golden, low offwhite head. Bretty lime and glue aroma. Medium light body, very light sparklies. Nice dry brett notes, citric hops, also a few unfortunate harsh higher alcohols lingering. Vineous, sponge finish.

Faint rim over hazy brownish golden beer. Strange aroma as from parsley on vinegar and a very faint lime-hoppy whiff. And Bretts in the finish. More Bretts in the flavour, with a faint sourish background; hints of caramel or brown sugar. Lemonpeel, overripe pear or banana. Light if very slick, not very carbonated. Bit strange, this one. Certainly not bad. Txs to Stef!

Batch 6. Vandaag in de tuin gewerkt dus dan krijg je hier wel zin in. Funky, brettsmaakje, bitter. Toch ook wel zoet, maar ook droog. Doen ze goed daar in Nimma.

Bottle, batch #6. Aroma: Stone fruit, herbal hints, funk, hop hints. Taste: Decent amount of grassy hopbitterness accompanied by notes of stone fruit, spicy Saison yeast and clearly present wild yeast funk. Quite bitter, grassy and lightly fruity, dry finish. Like stated on the label: A cross-over of a Brett IPA and a Saison. Nice one.

Bottle at home. Allright hazy golden with white head. Grassy hops, grapefruit, wheat, huge Brett, sweaty socks, bready. Actually this goes into Orval territory. Good batch! This is way better than I remember this beer from the past, less grainy and sweet and more hoppy and dry.
