A completely artisanal cider. The apples are delicately pressed for 4 hours. The juice is then fermented naturally for 5 months in old oak barrels. Natural sparklig is developing in bottles thanks to the second fermentation.

A complex, aromatic and fresh cider due to the apple varieties used in the mix. Very little bitterness, a surprising aromatic length and a delicate bubbling, fine and light.

Sample courtesy of minutemat, cheers Mat! Slightly hazed golden colour, white foam head that quickly dissipates away and aroma of fruity apple, barnyard funk. Taste is sweet, apple, fruity, tart, with barnyard funk, a musky note, and alittle drying tannin. Medium bodied, spritzy carbonation, medium-sweet finish. Nicely drinkable.

2020 edition. Pours unclear blonde, scent is very funky, raw and naturally funky apple. Taste is full, funky, dry and natural apple (skins) , mild brett almost. Balanced dryness. lovely chewy fruityness.

Little cloudy orange blond beer, no head. Aroma: nice, crisp sour apples, some sweet apple juice, little funky, woody touch. MF: ok carbon, medium body. Taste: nice acidity, very fruity, lots of apples, funky touch, green apples, some apple skin, a bit of tannins. Aftertaste: pretty dry, pleasant acidity, gentle bitterness, green apples, little funky, nice one!

Bottle shared. Bit hazy light golden. Sweet apple, lots of white wine notes, some green apple, blossoms, dry wood, leather. It still has quute some fruity sweetness, but also dry tannins finished off white a solid dose of alcohol and sweet white wine. Medium dry finish. It's a bit if everything which is nice, but also I'm not a fan of the kinds of wine this resembles a bit, so that part doesn't work for me personally. Feels definitely like more than 7% abv.

Bottle shared at pre-Kingsday tasting. A bit hazy pale yellow color, small white head. Smell and taste both are sweetish, soft apple peel notes, a decent hint of cinnamon, a moderately dry finish. Not too bad.

Bouteille 75cl. Bottle# 7210.
Dorée-orange sur léger voile, col blanc retombant vite.
Arôme est fin fruité, pomme pressée, verger rétro fin de boisé barrique. Pointe fraîche, peau de pomme et chair.

Palais est funk, râpeux pomme verte. Effervescence marquée sur le champennois avec une touche acerbe de la pomme qui revient en fin de bouche.

7 meter cork shootout at the beach. Quite sour, warm fruitiness, peachy, apricot, old apples, cinnamon sticks, Calvados BA boozy, almost gluey. Bit weird. Quite dry in the finish. Feels like fairly high abv (= 7%, feels like ~8.5%)
