3 Fonteinen Aardbei/Kriek wordt bekomen door een opeenvolgende maceratie van aardbeien en krieken. Eerst wordt er kort gemacereerd met aardbeien, waarna de aarbeienlambik wordt gebruikt als basis voor een tweede maceratie met krieken. Op deze manier wordt de bijzondere fruittoets van aardbeien gecombineerd met het ronde mondgevoel van de krieken. De resulterende fruitlambik wordt dan verder geassembleerd met jonge lambik voor de verdere vergisting in de fles. Natuurlijk fruit, zonder toevoeging van sappen, siropen, of suikers. Ongefilterd en ongepasteuriseerd

Bottle, assemblage no 98, seizoen 18/19, bottledate 30/07/19. Color: Very nice clear orangish red, fast disappearring head. Aroma: Tart strawberry and cherry, funky. Taste: Over moderate tart, fruity notes of alternating strawberries and cherries, somewhat more strawberry. Subtle funk notes, oak wood. Moderate sweet, very light bitterness. Fruit and tartness are both quite smooth. Nice complexity and balance. Nice and refreshing.

Bottled 30.07.2019. deep red hazy color, small pink head. smells of strawberries, cherries, some funk, barnyard, light vanillaish. very nice smell. full body, soft carbonation. tastes strawberries, grassy, earthy, cherries, wood, oak, peppery. finishes dry and lightly sour with notes of cherries, funk and berries. very nice one. loved the smell almost a bit more, taste is quit funk, more cherries then strawberries. overall very nice 8, 4, 8, 3, 17

One of several 3 Fonteinen lambics that have 'risen' above the vast Twists of Fate pool of experiments, released a couple of months ago and based on several Twists that combined (organic) strawberries with sour cherries - consecutively in this case, that is to say, the lambic was first macerated with strawberries to create a strawberry lambic, and only then was this strawberry lambic macerated with cherries, so as to obtain a layered, 'double' fruit effect. Bottle from Dranken De Moor, shared at Leopold's garden tasting. Medium thick, opening, mousy, off-pinkish white head, dissolving into eventually nothing; misty amberish-tinged deep vermillion red robe, turning a bit 'dirty' and clouded with sediment. Aroma initially strongly dominated by fresh sweet and ripe summer strawberries, mingled with impressions of cherry skins and cherry pits (more than actual cherry flesh, it seems), damp earth, wet oak wood, farmland, almond, freshly cut garden weeds, sour yoghurt, lemon juice, raspberry vinegar, vague lychee wine note somewhere. More fleshy cherry effect than expected in the onset, rounded as promised, juicy and tart with a lemony acidic edge and an unripe nectarine-like astringency, softly carbonated; bready core, buried under a ton of sour cherry flavours, with tannic effect from the skins and pits - turning a tad earthy in the end, steeped in strong lactic acidity. But then this bright, sweet, summery, juicy, jam-like strawberry aroma returns in full force, playing with hints of vanilla-ish oak wood, Bretty sweatiness and bready yeastiness, while down below, the combination of tannins and acidity makes for a bone dry ending. A bit more 'earthy' than expected perhaps, compared with the - relevant - Twists of Fate, but the strawberry aroma is really alluring and in all, this is a very rich, deep, complex 3 Fonteinen fruit lambic once again.

Tons of strawberry in the nose, together with significant amounts of 3F funk. The taste follows the same notes, with lots of strawberries, some nice sour cherries, 3F mineral funk, lambic funk. Quite tart, as was expected, but very fruity and with a solid amount of funk to make it quite interesting.
