Brouwerij 3 Fonteinen “Speling van het Lot” (Twist of Fate) is a series of small batch experimental brews, barrel maturations, fruit macerations and/or blends. This 14th version is a bottled 18-month old lambik that further carbonated in the bottle (a mono blend so you will) that was brewed on December 20th 2017. During such “Longest Night”, we add and infuse different ingredients on the four different coolships in our bre-whouse in Beersel. One of those additions were fresh pine tree branches and needles, sourced in the garden of the mansion at Ukkelse Steenweg 327. This villa was previously owned by an employee of the nearby Van Haelen lambic brewery, which closed in 1957. Recently, it featured the pop-up restaurant of Chef Maarten Van Essche, called “Wilder At The Villa”. Maarten, currently running restaurant Magma in Mechelen (www.magma.be), came up with the idea, inspired by previous experiences in Nordic cuisine...The Wilder logo was designed by Viktor Hachmang.

0,75l bottle at home. yellow clear color, small white head. smells piney, funky, earthy. full body, soft carbonation. tastes pines, funky, grassy, earthy. finishes lightly dry and light sour with notes of grassy, funky and piney notes. Very nice one

Bottle thanks to Andrew. Pours a cloudy orange with medium off white head that lasts. The aroma is strong funk, pine, oak, citrus, earth. Slick body, funky, pine, oak, earth, fruity, light dry finish, enjoyed this.

Pours unclear, darker blonde. Smell is full, very intense, funky, woody, pine isn't recognizable as such, but makes scence. Taste is strong, intense herbal (pine, but very unlike piney hops) Strong tartness. Medium body, high carbo. Intense tartness. Very mildly acetic.

Hazy golden with a white head. Aroma of spruce, lemon and funk. Flavour is moderate sweet and sour. Medium bodied with soft carbonation.

Bottle aampled at OBD. Bit hazy golden with white head. Lemon, spruce, pune needles, malts wheat, oak. Typical lambic with pine and lemon rind? Medium sweet, sour and bitter. Medium bodied.

Lambic is ‘wild’ in many ways, this specific one may indeed be considered even ‘wilder’, as it contains pine shoots and needles collected in the Beersel region – something I have encountered in Nordic farmhouse ales and even some IPAs before, but never in lambic
 The name comes from a pop-up restaurant called “Wilder at the Villa”, though, the owner of which is apparently the guy that came up with this whole idea. Only 722 bottles were made of this, all 37.5 cl. Egg-white, mousy, slowly breaking, shred-lacing head over a pale orangey peach blonde, hazy robe. Aroma of cedar oil, spruce shoots, fresh orange peel, peanut oil, freshly cut red apples, old sherry, dry hay, paprika powder, dandelion leaves, halfripe peach. Dry, crisply sour onset, lemony-acidic in an elegant, refreshing way, hints of apple peel and unripe apricot but also something orange peel-like no doubt coming from the pine needles; minerally carb, supple bread-crusty core. Ongoing sourness, bone dry middle, dry old citrus peel effects continuing with a tannic woodiness in the end; a layer of resinous pine flavour is draped over this whole, but thinly so, in fact less strong than expected based on the nose, but adding a certain herbal ‘fraücheur’ and – strangely – a citric effect I have not experienced in a lambic before (apart from some dry-hopped ones by fellow experimentalist Cantillon, perhaps). I did not know this version existed so this was a bit of a surprise that lovely tasting day at Lambik-O-Droom – unique, complex, refreshing and aromatic. Very impressive and ‘postmodern’, and bound to please the Scandinavian beer geeks
