Blend of whatever was left of Reine des Prés (the meadowsweet lambic Cantillon produced for the first edition of BXL Beerfest) with elderblossom lambic (I assume the one used for Mamouche), further macerated with elderberries; at Moeder Lambic Fontainas during Zwanze, thanks to sebletitje for sharing! No head whatsoever, cloudy brownish-tinged peach blonde robe, bit murky. Aroma of strong elderblossom and indeed meadowsweet connecting and blending well with each other (to the point where they become one), Roomer, sweet cicely, yoghurt, stale sweat, cooked beef, elderberry syrup, damp hay and, lurking in the background, something vaguely sexual (female private parts – sorry for this but it did remind me of those). Fruity and very estery onset, actual elderberry flavour indeed mingling with lambic fruitiness reminiscent of green gooseberry and unripe pear, no carbonation worth mentioning, bready core deeply buried under drying tartness and tannic effects (from wood, but also from elderberry seeds and flower stalks, even a bit green plant-like at a certain point), with considerable – again, almost ‘sexual’ – funkiness in the end, bit meaty as well, as is often the case in elderblossom beers. Ends dry and aromatic, very flowery in this damp, meaty way, with softening and juicy elderberry fruitiness for good measure. The meaty aspect of the elderblossom reinforces the floweriness of the meadowsweet to the point where both become nearly indistinguishable, and the aromas of the elderblossom reinforce the – all in all relatively subtle – presence of the elderberries. Not the most accessible lambic blend I had so far, but certainly a fascinating one.

Draft @ Moeder Lambic Fontainas - Zwanze day 2021.

Draft @ Moeder Fontainas. Red berries pureed coloured appearance but not very bright. Explosive elderflower to the max more than any Mamouche I have ever had before, Meadowsweet probably adds a lot as well with huge acidic red berry / elderberry, quite acidic, lemony but explosive taste as well, superb.
