ご存じでしょうか?実は私たちはサワービールが大好きで、ケトルサワーもよく造ったりします。ランビックやグーズのような複雑さはありませんが、ケトルサワーにはフレッシュで飲みやすいという良い点もあり、様々なフルーツを加えて造るのも面白みがあります。

私たちが造るフルーツサワーは大きく2種類に分けられます。1つはフルーツの豊かな風味を前面に出したもの。もう1つはフルーツを他の材料と組み合わせてより複雑な味わいを生み出したもの。今回仕上がったものは後者であり、これまでにリリースしたビールの中でもかなり面白い組み合わせです。
パイナップルに着想を得たアシスタントブルワーのJKと歩は、様々な構想を練ったり試験を行いました。パイナップルはそれだけでも十分に美味しいフルーツですが、それ単体では単調です。そこで何か“スパイス”を加えることができないかと考え、タラゴンに行き着きました。この一風変わったタラゴンの土っぽさ、ミントやアニスのような特徴はパイナップルの風味と見事にマッチし、迫りくるフルーツとハーブの味わいの変化に、もう一口が止まらない味わい深さがあります。しっかりとしたパイナップルの風味を残すために、今まで造ってきたフルーツサワーよりもかなりの量の果汁を加える必要がありました。その分アルコール度数も高くなってしまいましたが、少し甘味はあるもののアルコール感はうまく隠れてくれています。

南国の島にバカンスなんて中々行けない近頃ですが、このビールでせめて浜辺の太陽を感じてください!

In case you haven’t noticed, we are big fans of sour beer here at Kyoto Brewing Co. and our releases frequently include kettle sours. While not as complex and intricate as traditionally soured beers like Lambic or Gueze, this style of brewing is great for producing refreshing and easy drinking products that are also a perfect canvass for experimenting with different types of fruit additions.

The fruited sours we make here tend to take one of two paths: showcasing the rich flavor of one particular fruit or combining fruit with other ingredients to create a deeper flavor experience. This release is certainly one of the latter and is one of the more unique combinations we have come up with to date.

Assistant brewers JK and Ayumu had a leading role in both the concept and execution of the beer starting with the inspiration to use pineapple. While delicious, this fruit tends to have just one dimension of flavor&mdashpineapple&mdashso they began to consider ways we could “spice” things up a bit before finally deciding on using tarragon. The unique earthy, almost mint or anise-like character of the tarragon really works well with the flavors of the pineapple and adds a complexity to the aroma that invites another sip to ensure where the fruit stops and the herb begins. To obtain the level of pineapple flavor we were looking for, so much had to be added that its sugar content brought the ABV higher than most fruit sours we have produced, but aside from adding a bit of extra sweetness the alcohol is very well hidden.

While you might not be travelling to any tropical islands in the near future, we hope this beer can bring you a feeling of the sunshine on the beaches!

nteresting. Now I know what tarragon tastes like. Initial taste is full on herbal again but the end is lovely pineapple. Nice tartness. Think they overdid it a bit on the tarragon though. Second time round the herb was a lot less prominent and the beer was a lot more delicious.

Growler from the brewery. Pours a thick cloudy pastel yellow with a tall, airy head. Big nose of pineapple and tarragon, creamy lactic notes, vanilla. Lots of spice. Very tart, pineapple, orange, passion fruit, tarragon, vanilla. Probably the sourest of their beers so far. The spice is possibly a bit overdone but this is lovely.
