One in a series of three (the others being 90 and 120 ‘days dry aged’, respectively), experimenting with dry aged malt, and apparently inspired by dry aged beef steak (hence the cow depicted on the can). Can shared with Craftmember and Goedele. Thin, pale greyish beige, dissolving, open head, very dark chocolate brown, near-blackish but still visibly brown – and cloudy, not to say muddy. Aroma of soaking wet ‘fondant’ chocolate bars, coffee grounds, wet leather, beef stock cubes, bonfire, old dry bayleaf and thyme, cola, charcoal, old-fashioned roasted chicory, dried cranberries. Sweetish onset with a pronounced dry beef stock cube-like umami effect, medium carbonated with a smooth body, but strangely lacking a bit in the oiliness one expects from a stout of this strength. Bitter ‘wet’ chocolatey middle, brown bread and dried tree leaf aspects, quickly turning roasted bitter and coffeeish in the end, while becoming a bit ‘dirty’ and earthy as well; herbal, tea-ish hop bitterness accompanies this coffeeish, eventually even somewhat ashy roastiness. Old school roastiness is something I strongly appreciate in a stout, but this one feels a bit undercarbonated and too ‘dirty’ for its own good; the aged malt, however, does add a beef stock- and dry tree leaf-like quality, but I would not associate it with dry aged beef in any way hadn’t I read that there is a connection.

Dark opaque colour, tiny vanishing brownish head. Toasted, cocoa aroma. Medium-bodied. Toasted, cocoa also in the flavour. Light bitterness. Solid but kind of basic.
