A complex mix of speciality & dark malts make up the grist with cane molasses added in the boil, the beer then being left to age in ex bourbon barrels. Coffee, vanilla and toasted coconut flakes were introduced before packaging to further compliment the beer's richness and complexity.

We packaged the beer and let it rest in our cold store for a year to allow the flavours to meld and develop. The cane molasses have produced deep cherry flavours, whilst the malts have remained thick and roasty, with undercurrents of vanilla, coconut & coffee.

Ty Grumbo. Aroma and flavor are sweet, roast, malt, some salt, somewhat medicinal, licorice, tartness, chocolate, fruits, quite strong booze. Overall: ok, I expected more ... nice label tho.
