Our most extravagant beer meets the most extravagant breakfast in this year’s Caribbean Chocolate Cake twist. We’ve adjusted the base here a little to allow the pancake element to come through. We’re layering maple notes from syrup to wood, maximising depth of flavour. A small amount of smoked malt, working in tandem with bourbon maple staves and the sweet, sticky undertone adds a delicate aroma akin to the impact you’d get from perfectly prepared streaky bacon. A generous helping of cacao and a dusting of spices, in part from the expressive Amburana wood, completes this liquid guilty pleasure.

33cl can (BB: 10/11/2021) from Etre Gourmet web shop. F: medium, tanned, average retention. C: dark, hazy, opaque. A: rich chocolate, cocoa, chocolate sauce, toffee, caramel, dried fruits, vanilla, bit coffee, complex. T: full malty base, cocoa, chocolate, toffee, maple syrup, dried fruits, vanilla, bit oxidized also but still very good, soft carbonation, nice balanced bitterness, fully enjoyed.

Can from Gedeelde Vreugde. Cloudy black, stable, foamy, beige head. Aroma of fondant, vanilla, smoking wood, maple syrup, prune, dried fig, coffee bean, clove, cinnamon. Taste has sweet prune, date and raisin in a malty body of maple & toffee, quite chocolatey too; bit smoky over a bitter base of coffee, wood & fondant. Herbal hoppy finish, slightly peppery, spicy notes of tonka & cinnamon lingering over chocolate and umami soy, softly warming brandy-like alcohol. Full body, oily texture, soft carbonation. Adequately balanced with a whole lot of things going on. Great!

Pours black, small tanned head. Scent is tad herbal almost, trough the combo of coffee and maple. Taste is full, smooth, mild bitterness. Sweet, but not as sweet as expected. Cinnamon, maple is hidden. Somewhat of the green coffee I also found in the 2020 base version. Another one of these new Caribbean chocolate cake variants by Siren, this one intending to evoke pancakes, apparently… Thanks Steve for sharing. Pale greyish beige, mousy, opening head, retaining well around the edge and in flat ‘veils’ in the middle, very dark chocolate brown robe – near black, but still with mahogany glow. Aroma of hot chocolate sauce, a lot of cinnamon, maple syrup, mocha ice cream, toffee, liquorice, latte macchiato, vanilla, espresso, cappuccino, caramel sauce, touch of incense. Sweet onset, dry raisins, very light umami accent, soft carb with full, oily, smooth body; caramelly and hazelnutty malt core with a bitter-chocolatey and eventually roasted coffee bitter edge, heavily sprinkled with cinnamon powder and the bitterness accentuated by a peppery hop dose; coffee and cinnamon linger with a dash of maple syrup, highlighted by very well-positioned, rum-like alcohol. Still carries a lot of ‘old school’ roasted bitterness, like the others in this series, but at the same time it manages to convey the pancake idea, albeit one with a whole lot of cinnamon on top. Delicious and very well made – among the better Siren brews I had to date, now that I come to think of it.

330ml can. Black with a brown head. Aroma of chocolate, light maple, and woody notes. Taste is rich and chocolatey, cocoa powder, spices, woody, a little maple, burnt/roast malts, bittersweet. Medium bodied. Would've liked more maple personally.

Clear dark brown beer, big creamy bit irregular beige head, pretty stable, adhesive, leaving a nice lacing in the glass. Aroma: lots and lots of banana, yeasty, soft roast, funky touch. MF: ok carbon, medium body. Taste: lots of coconut, dark chocolate, more coconut, caramel, banana peel, pretty bitter. Aftertaste: quite some dark chocolate, more ripe banana and banana peel, bitter touch, nice stuff, sweet finish, hint of vanilla, banana, caramel, some amburana and hazelnut.
