Drie biologische, Pajotse kweepeer variëteiten rijpten op drie houten vaten. Voor het bottelen is de lambiek geblend met een Pajotse bio-cider van Noormandische appelvariëteiten, FréquinRouge, Marseguin en Kermerrien. Gegist en gerijpt op eiken vaten.
Zorgvuldig gemengde met lambiek gebrouwen van oude lokale graansoorten. Tarwe bijdrage van eigen erf. Wild en spontaan natuurbier. Deze botteling is bereid uit 60% kweepeerlambiek en 40% cider.

Pours a clear blonde, even a tad more clear than the quince lambic. Small white head. Scent is funky, brett, cider, dry. Taste is sharp, dry, quite apple forward. Milder on the quince. Somewhat funky.

Blend of quince lambic with cider (both homemade) from this new kid on the lambic block, from a 75 cl bottle with cork and muselet - once again thanks to tderoeck. Some 'gunsmoke' when opening and foam coming out after a few seconds, but no real gusher. Irregularly shaped, moussy, egg-white, opening but edge-retaining head on a hazy peach blonde beer with pale orangey hue, turning rather murky and deeper brownish-amber-tinged in the very end. Aroma of green apple, both freshly cut and as oxidized Granny Smith peel, quince jam without the sugar, cooking rhubarb, damp hay, withering sorrel, stale lemon juice, bread crust, sweat, green plant stalks, freshly cut thistles. Crisp onset, tart with a lot of malic acid from both the quince and the cider, strong green apple dryness, bit astringent even especially when the malic acid starts to mingle with the lactic acid; minerally carb, supple yet full body. Pleasantly bready 'soil' under ongoing drying lactic and malic sourness, very pronounced green apple and dry cider -effects, quince (if you are familiar with it) remaining unmistakable as well; also a lot of Granny Smith flesh and oxidized peel, merging seamlessly with the dry cider infusion into one 'green-fruity', dry and crisp whole. This spirit is maintained well into the finish, where hayish Brett notes, some old wood and dry hay are added, remaining refreshing, green and crisp till the last drop. Fruity in a tart way, but nowhere agressive; lovely tannic effects too but nowhere overpowering the quince-cider combo. Among all the 'malic' lambics I had so far - and admittedly there aren't many - this is probably the most beautiful one. The combo works, apple cider and quince intertwine perfectly into each other here - this is an 'apple-themed' lambic (assuming quince has a comparable effect to green apple) of great elegance, another testimony to this Boerenerf's surprisingly sudden greatness.

Cloudy orange cider, small creamy white head, unstable, falls down quickly, non adhesive. Aroma: spicy, lots of fresh apples, apple skin, green apples, funky. MF: ok carbon, medium body. Taste: spicy, lots of apples, fresh apples, soft acidity, dry, some tannins, nice! Aftertaste: dry, spicy, lots of green apples, some tannins, nice stuff!

No head, and once more a beer looking as peach juice. Nice lambic nose with a bit of apples, turning into cider quickly. Quinces unmistakable in the flavour, along with apples and cider still obvious. Side aroma reminding of felt. Velvety texture, low to medium carbonation, bit (fruit)slick. Let's say far from bad, and finally a glimpse from this elusive relic surviving in the Pajottenland.

0,75l bottle at home shared by Saeglopur, big thanks. orange murky color, small white head. smells spices, apples, bit oxidized, peppery, earthy, lightly smoky. nice smell. full body, soft carbonation. tastes smoky, earthy, spices, herbal, leathery, light wood, quince, light tannins. finishes lightly dry and lightly sour with notes of smoke, quince and some spices. I very much like this one, love the smoky / tanniny notes. great balance. lovely overall, looking forward to more stuff from this brewery 7, 4, 9, 4, 17
