15 June 2021. At Dok Brewing Company. Cheers to the Teamleader crew! Hazy yellow, stable, frothy, white head. Aroma of spruce, pine resin, bread crust, unripe pear, young banana, apple peel, wheat, pepper, citrus. Taste has sweetish apple, pear & vague banana, touch of zesty mandarin, low in wheat, slightly metallic somewhat with bitter spicy accents. Herbal hoppy finish showing pine, spruce, wheat and retronasal bread. Medium body, slick texture, average carbonation. Decent but that metallic accent started to bother me after a while.

New Dok creation, a saison brewed with spruce tips – which actually seems weirdly appropriate for the style. Thick and frothy, snow white, irregularly edged, plastery lacing head, misty deep ‘old gold’ robe. Aroma indeed reminiscent of spruce in a kind of ‘moss green’ way, wormwood leaf, grapefruit peel, green banana, dry bread crust, bitter honey, margarin, freshly cut grass. Dryish onset, clean with hints of hard pear and unripe banana, very crisp and minerally, somewhat coarse carbonation, smooth cereally and bread-crusty malt core working to a long bitter finish, rooty and quinine-like – but indeed with a resinous spruce aroma retronasally; quenching and drying, remaining clean and focused, very pleasant. An old school saison with a postmodern twist – or an ancient twist perhaps, as spruce shoots were already used in Nordic farmhouse ales during Viking times (and probably even before that). Interesting, quite daring in its bitterness and to the point: classic Dok quality, I would say.

Clear deep blond beer, big creamy yellowish head, stable, adhesive, leaving a nice lacing in the glass. Aroma: very malty, grains, bit soapy, herbal, green herbs. MF: lively carbon, medium body. Taste: bitter start, herbal, very spicy, soft acidity, pretty bitter, a bit chemical. Aftertaste: green dried herbs, a little fruity, spicy, a hint of tropical fruits, somewhat medicinal, spicy, not bad, not great.
