… so it was in the summer of 2018, we had the honour of visiting Frederiksdal, the renowned Danish kirsebaer orchard and cherry wine maker. Not long after, September 13th 2019, we received a few hundred kilos of their sour cherries and macerated them on a charred oak barrel. We used a gentle 3 Fonteinen lambik from one barrel and two different brew days and macerated the lot for almost seven and a half months. While blending, we added one- and two-year old lambikken from three different barrels and three different brews, and some lambikwort from three. different brews. The final fruit intensity is 400 grams of kirsebaer per litre of this special version of Kriek.

Bottle. Deep ruby. Massive dank funk, sour cherries, almonds, wheat, light weedy notes, oak, vanilla, a hint of alcohol and soft spices. Solid medium sour, lighter sweet and bitter. Over medium bodied. Very funky, a bit rough but tasty.

Pours a very dark purplered. Small ring of pinkish head. Scent is full, juicy cherry, funk, mild oak, bit of lambic character. Dry, 'plastic (in a good way) . Tatse is full, intense , cherry. Decently tart, mildly acetic. Very woody, and A LOT of fruits. Lovely cherry lambic!

Bottle at OBD. Pours a cloudy ruby with small off white head that diminishes. The aroma is strong funk, oak, cherry skin. Slick body, sweet cherry, light funk, acidic, very nice.

Was looking forward to see what 3F could do with these cherries. The answer is make something delicious. Plenty of cherry, nicely tart, fruity. Some good funk and loads of oak. A classic kriek for sure, but slightly different.
