This version of our Pruim was made with the Dubbele Altesse variety. These plums were sourced from the orchards of Wijndomein Hoenshof in Limburg, Belgium. We macerated the entire plums for four months on an ex-Bordeaux barrel. The Lambikken originate from three different barrels and three different brews, and one third of the brews was made with Belgian cereals. The final fruit intensity is at 582 grams of plums per litre of Pruim. 100% 3 Fonteinen.

Plum lambic in this vast Twists of Fate series, with plums of the ā€˜Double Altesseā€™ variety, a type of large prunes. Thanks Craftmember for sharing. Snow white, tiny-bubbled, medium thick, moussy head on a misty warm deep golden beer with apricot hue. Aroma of unripe sour plums, Conference pear, freshly cut grass, minerals, sweat, sorrel leaf, moist clay, old dry sherry, lemon peel, vague background note of sewer water fading away quickly and completely. Crisp, acidic onset, lots of sour plum tartness and astringency, green apple and gooseberry accents, sourness accentuated by sharp, cava-like effervescence; lactic sourness adds to that green plum wryness, but there is an overall smoothness too (probably from the plumā€™s flesh) which keeps things supple and drinkable. Plum skin and wood tannins do make for a bone dry ending, though, where lemony acidity, unripe green plum and light funkiness linger for a long time. The prunes seem to have added more acidity here than sweetness, with the tannins from the fruit adding an astringent touch; still, in comparison with some other fruit lambics I had, the whole remains supple, smooth and elegant for some reason. Interesting, though perhaps not the ā€˜plummiestā€™ of plum lambics I had to date.

Pours unclear, peachy amberblonde. Small to no white head. Scent is fruity, plums , gentle tartness. Taste is very fruity, fairly 'thick'. Gentle sourness, builds up in the back. Complex, but mostly lactic acid. Very fruitforward, perhaps a tad more than what you'd call balanced. Still, lovely beer though.

0,75l bottle at the Lambic-O-Droom. orange murky color, small white head. smells of plums, stone fruits, parfumy, funky, light horse raddish. very nice smell. full body, soft carbonation. tastes of plums, stone fruits, peaches, citric, grassy. finishes dry and lightly sour with notes of plums, peaches and some citric notes. very nice one, stone fruit forward

Bottle at OBD. Pours a cloudy orange with small white head thar lasts. The aroma is pure sugar, plum skin, oak, funk, fruity malt. Light body, plum, citrus, oak, funk, nice tartness, very nice.
