Pours black, small tanned head. Scent is fairly full. beautifull bourbon. Taste is full, roasty, beautifull bourbon once again. Very balanced. not pastry at all. Not overly thick either. But oh, so beautifully balanced and refined. lovely !

Imperial stout by Totem aged on Elijah Craig bourbon barrels, from a new series of barrel aged Totems. Thanks to Klaas and Liesbeth for sharing! Pale beige, thin, open ‘ring’ for a head, black robe with thin burgundy edges. Intense and beguiling bouquet of hot chocolate and chocolate liqueur, vanilla, the old-fashioned cherry ‘pralines’ my grandmother used to love, Belgian chocolates in general, obviously bourbon, nougat, tawny port, hints of pear drops, wet cinnamon, toffee, latté macchiato, noble oak furniture. Dense, focused onset, sweet and concentrated (Belgian chocolates effect again) with cherry-like sourish edge but thinly so, soft carbonation, very full and vinous body, though noticeably a bit thinned by alcohol. Intensely chocolatey core, hot chocolate sauce, with side effects of nougat, coffee cream and candied cherry; vanilla comes up strong, both from added vanillin and from the bourbon as well as from the oak wood. Woody tannins and bourbon-like booziness in the end, more than enough of both, but that whole ‘Belgian chocolates’ feel remains dominant, propelled forward by the vanilla. A liquid ‘praline’, flirting with pastry stout territory, but in a most refined, noble and utterly delicious way. What a gem.

Cloudy black, stable, frothy, dark beige head. Strong aroma of milk chocolate, Nesquik almost, meringue, vanilla, hazelnut, biscuit, mocha, brownie, fig, bourbon. Taste has sweet fig, date, prune & some green apple in a very thick malt body of chocolate, fudge & brownie, touch of coffee, 'powdery' hazelnut and earth. Herbal hoppy finish, toasty & roasted, fondant, hazelnut & cream lingering as well as hefty, heating bourbon alcohol. Full body, creamy texture, soft carbonation. A daring Imperial Stout, even more than you'd expect from Totem; it has all the elements you want but leans very much on that chocolate, hazelnut and sharp bourbon aspect. Delicious, yes, but needs cellaring I'd say.

Clear very dark brown to black beer, small creamy beige brown head, unstable, dissipates quickly, non adhesive. Aroma: sweet impression, lots of vanilla, milk chocolate, caramel, chocolate pudding, some lactose? Very intense and sweet, but complex and very nice! MF: soft carbon, medium to full body. Taste: sweet start, caramel, more caramel, vanilla, soft roast, some alcohol, lovely stuff, very intense and complex, amazing beer, love it! Aftertaste: sweet touch, caramel, lovely stuff, nice roast, alcohol, little bitter, some gingerbread, chocolate notes, lactose. Very nice one!
