2014 Preservation Series: Belgian-Style Ale Fermented in Oak Barrels

Tripel Tonnellerie is a 100% barrel fermented version of a Belgian Abbey Tripel. The base beer carries a classicly clean maltiness, balanced by a fruity aroma and a dry, spicy mouthfeel. Extended fermentation in oak barrels innoculated with wild yeast allowed the beer to develop the rustic, earthy tones of a classic countryside biere de garde resulting in a uniquely flavorful beer, suitable for beer and wine lovers alike.

Hazy golden color. Slightly sour oaky nose with bread and some orange character. Tart full body, with lots of oak but not huge depth. Kinda ok but not going anywhere special.

Bottle @ Abijen’s Christmas non-tick tasting. Golden pour. Aroma of brett, grassy grain and citrus. Taste of yeast ester, mild citrus, wheat, brett and a little horseblanket. Nice one.

Bottle @ Abijen’s Christmas non-tick tasting, small sample. Hazy yellow color, short head. Aroma is slight sour fruit, pineapple, some bretty funk, bit grainy wheat. Bit sour in taste, funky, some fruity sweetness, bit dry as well. Nice stuff.

Sampled from bottle @ Abijen’s Christmas non-tick tasting. Hazy pale yellow color, small white head. Smell and taste wheat, yeast, citrus, slightly fruitpeel and slightly tart. Decent body and carbonation.

Bottle thanks to Will. Pours a clear gold with a medium frothy off white head that lasts. The aroma is strong fruity yeast, straw, and oak. Medium mouth, tart, oak, brett, lemon zest, really nice.

Bottle. Cloudy straw color, fluffy white head. Nice floral perfume aroma. Taste is funky, peppery, straw, hay, Belgian yeast. Nice.

Pours clear blonde. Smell is slightly sour, honey . Taste is sour , inda dry . Some lemon-fruity notes. Bit malts as well . Not a tripel to me , yet this is better ;)

Got in a trade with RaulMondesi. 750 ml bottle into chalice, bottled on 4/4/2014. Pours hazy bright golden color with a 1 finger fairly dense white head with good retention, that reduces to a thin cap that lingers. Light spotty lacing clings on the glass, with a good amount of streaming carbonation retaining the cap. Aromas of big lemon, orange zest, peach, apricot, pineapple, pear, apple, light banana, pepper, clove, wheat, cracker, candi sugar, herbal, grass, light funk, and yeast earthiness. Damn nice aromas with good balance and complexity of fruity/spicy yeast, pale malt, and earthy hop notes; with great strength. Very minimal oak presence. Taste of big lemon, orange zest, peach, apricot, pineapple, pear, apple, light banana, pepper, clove, wheat, cracker, candi sugar, herbal, grass, light funk, light oak, and yeast earthiness. Fair amount of earthy yeast spiciness on the finish; with lingering notes of lemon/orange zest, peach, pineapple, pear, apple, pepper, clove, wheat, cracker, candi sugar, herbal, grass, light oak/funk, and yeast earthiness on the finish for a good bit. Very nice complexity of fruity/spicy yeast, earthy hops, light oak, and pale malt flavors; with a crisp malt/yeast balance and zero cloying flavors after the finish. Medium carbonation and body; with a very smooth, crisp, and slightly prickly/bready mouthfeel that is nice. Alcohol is very well hidden with only a slight warming present after the finish. Overall this is a damn nice tripel style. All around great complexity, robustness, and balance of fruity/spicy yeast, earthy hops, light oak, and pale malt flavors; and very smooth and crisp to sip on for the big ABV. A very enjoyable offering.

Golden nice lacing Nose is super bread forward nice funk and some grape skin. Taste is super funky, grape skin, nice musty really great. Oak tannic finish
