Ceréjhe is the word used to designate cherries in Wallonian dialect. A delicate blend of saison (spring barley, Wallonian Winter barley, spelt & wheat) fermented with our own strain, 1 year old lambic and cherries. The cherries come from the lovely lands of our friends Sandra and Stephane next to the beautiful Mont Ventoux. The cherries underwent a 7 months long fermentation at cold temperature and were left intact (no pressing) during the entire process to allow the aromas to slowly diffuse into the beer.
The maceration was then back blended with the base saison to reach a balance between the saison, the lambic and the cherries. Not meant to be a cherry bomb, we hope that you'll enjoy the delicate notes of these beautiful fruits, coming from an outstanding terroir.

MBCC 2023 Copenhagen, Blue Session. Hazy bright purple red colour. Aroma and Taste of mild sourish red fruits, apples, red grapes, refreshing.

Cherry beer by Brasserie de la Sambre, with pale pinkish off-white, moussy, shred-lacing head and deep ruby red robe with vermillion glow. Aroma of cherry peel and cherry juice (not so much cherry flesh or cherry jam), banana peel, beetroot, white bread, soap, yoghurt. Crisp onset, lots of vivid, genuine cherry tartness, juicy but lacking a bit in full ‘fleshiness’, feeling a tad thin; minerally carb, smooth cereally core under cherry juice dominance with side aspects of green banana, red apple and beetroot. Some tannic effects of cherry skin in the finish, remaining low in hop bitterness. Feels very ‘real’ – as in: made with actual cherries, which is obviously a plus for me, with all those horrible ‘rouges’ swarming around these days. Have a point for that.

Clear ruby red beer, no head. Aroma: fruity start, some cherries, sourish impression, a bit spicy. MF: ok carbon, medium body. Taste: a little sweet, fruity, dry, some grapes, a little bitter. Aftertaste: hoppy bitterness, spicy notes, dry finish with some tannins.

Couleur pourpre, col léger rosé plutôt effervescent.
Arôme au bouquet frais fruité et fleuri sans être trop dominant, petite note rétro-nasal de grains avec les effluves fleuries qui sont bien perceptibles.
Palais sur une belle rondeur de bouche avec un sécheresse marquée - rustique dres grains; épeautre, froment et une pointe de pils. Profile barrique léger avec un apport de funk qui reste discret - le fruité de la cerise est plaisant et frais.

Bottle pour, taster. @MBCC 2022, Copenhagen (Denmark). 13/05/2022 [#4.957 Global - #161 Belgium - #1 Brasserie de la Sambre (My Belgian brewery #67)] Beautiful cloudy red with a minimal pinkish head. Aroma: sweet cherries, funk and some yeast. Taste: sweet cherries. tart, oak barrels and funk. Next one please!
