05’ Vintage, bottle consumed at One Pint Pub. Clear orange/yellow pour with a faint white head. This is my second favorite of the three, and it was a real honor to get to try it. Big sour fruit aromas with undercurrents of oak. I have never tried gooseberries before, but can say the fruit dominates the taste. Tart, bitter, and sour with lingering berry and acidic notes. Just a masterfully crafted lambic with a huge berry character. Outstanding mouthfeel with good body a carbonation. Even with the overwhelming tartness of the berries, you do not loose the depth and complexity of the beer. Bravo.....

Bottle 375ml.Clear sparkling - chattering intialy. Medium yellow orange color with a large, frothy, good lacing, mostly diminishing, off-white to white head. Aroma is moderate to light heavy fruity - tart, wood, sour grape, dry wood, gooseberries tart. Flavor is moderate to heavy sweet and acidic with a long duration, super dry and sour, gooseberries acidic and tart, grape. Body is medium to full, texture is oily and sticky, carbonation is soft. Very nice IMO. ;O) [20100630]

Bottled at RBESG ’07 Hazy golden. Barnyardy aroma with a light touch of those gooseberries. Dry and soft with some barnyard, The gooseberries has made it sweeter than the regular Cantillons. Juicy and very pleasant. Intense but not the most complex or spectacular offering for being Cantillon. (Still it’s 4.3!!)

Originally serious amberish head, gone fast, but transparant rim stays on; very high carbonation in rusty-orange beer. Typical Cantillon nose with leather, Brett and very fruity - but in this case, the fruit is unrecognisable; could be anything, including sloeberry with lemon. Dry, very tart fruity - again lemon, lime and lemonrind. Brett is obvious, but the tart fruit is really all-determinant. Adstrigent in the finish, long lasting fruity flavours. Very dry, very tart, hint of adstringency, acidburn. Not on this database, but I have also tasted the green gooseberry lambic (not commercialised yet) for HBL (these are red-purple gooseberry), and the verdict stays the same: I think gooseberries are not athe best option to be married with lambic. The aroma & flavour are not recognisable, and they are just blowing up the tartness.

Bottle (2003). Hazy orange brown colour, mediumsized white head. Cantillonish sourness with some other berries. Same in flavour. Good as all Cantillons, but felt quite easy to drink, just like the Red Currant one (Groseille). 7 3 7 3 13

Bottled@One Pint Pub, Helsinki. Golden colour, small white head. Aroma is big wooden sourness, and wood along with some really nice. Flavour is sour wood, some mild sweetness. Extreme dryness. 8 4 8 4 16.
