この「なごり雪」は、前回の「初雪」と共通のキャラクターを持っているものの、一番の違いはよりふくよかでクリーミーとなったビールのボディにあります。『初雪』の仕込みの際には、マッシングの際の温度を段階的に上げていく、ステップマッシュよ呼ばれる方法で仕込みを行いました。歴史的には、醸造技術が発展途上で、麦芽の製法が今ほど進化していない時代に、より麦芽のデンプンを糖化させ麦汁(これが発酵してビールになります)を抽出できるようにと編み出された手法です。 しかしながら、我々はこの手法が麦汁の抽出にどの程度効果があるのか実際にこの目で見たかったので、試してみることにしました。

『なごり雪』では、 「初雪」の際に試したステップマッシュではなく、我々が他のビールにも用いているシングルインフュージョン法(単一の温度で麦芽のデンプンを糖化させて麦汁を得る方法)を採用するとともに、小麦麦芽の割合を33%から40%へ増やしました。また、イーストの醸し出すフルーティなキャラクターをより鮮明にするため、フランス産のホップ(TriskelとAramis)から、オーストラリア産のホップ(Summer)へと変更を行いました。その結果、わずかな酸味とホップのバランスがとれつつも、ベタ甘くない、満足のできるビールが仕上がりました

なぜ『なごり雪』か?「初雪」がリリースされたのはちょうど年末でしたが、いづれ季節もうつろい、春へと向かいます。スキーのシーズンも最後となったこのタイミング、これがこのシーズン最後の雪になるのではないか、なんて思うこの時期にふさわしい名前として『なごり雪』としました。 晴天のもと、「なごり雪」を片手にゲレンデに立つ、なんてのはオツなものではないでしょうか。

At the end of this week and throughout the next week, we'll be releasing Nagoriyuki, our second wheat beer (Hatsuyuki was our first). While we enjoyed the fruity aroma and crisp character of Hatsuyuki, we felt that there was still room for improvement before we found the wheat beer we were looking for.

Though Nagoriyuki shares many of the same characteristics as Hatsuyuki, the main difference between the two is in the body of the beer, which comes through as full and creamy. Originally, while brewing Hatsuyuki, we elected to pursue step-mash regimen. Step-mashing involves heating up the hot water that mixes with the grains in stages. This was historically done as malting and kilning were not well understood and the staged increase of hot water was done to create enzymes that would help further break down the complex starches found in the grain to create wort (the sugary liquid that provides yeast sustenance to create beer).

With Nagoriyuki, we decided to forego the step-mash regimen and went for a single temperature infusion (something we do with our other beers) and increased the percentage of wheat malt (up to 40% from 33%). To further accentuate the fruity character of the yeast, we also changed the hops from French hops (Triskel and Aramis) to hops from neighbouring Australia (Summer). Overall, the beer is much more satisfying, with a hint of acidity and hop balance to keep it from feeling overly sweet.

And why the name Nagoriyuki? While the timing wasn't intentional, we noticed that while Hatsuyuki (First Snow) came out at the end of the year, Nagoriyuki ("Lingering Snow") came out just as Japan's ski resorts are getting their last snowfalls and heading into spring skiing and snowboarding. If you are on the slopes with a Nagoriyuki, it is sure to be a perfect complement to a blue bird day on the mountain!

Tap at Gremlin. Liked this one a lot! Nice stuff. Wheat dominated, high maltiness, little bit of citrus and light tropical, maybe melon and some mango. Finish is orange and citrus. Good stuff. Easy drinking. Lightly spritzy body. Bit more creaminess the second time I had it.

Draft at Beer Komachi, Kyoto. Fairly hazy golden with a white head. Aroma of yeast, wheat, light citrus and a touch of herbs. Flavour is light to moderate sweet and bitter. Light to medium bodied with soft carbonation.

Tap at Beer Komachi, Kyoto. Poured a hazy straw colour with a mostly lasting frothy white head. The aroma is grainy malt, light yeast, light citrus fruits. The flavour is moderate bitter light sweet, with a crisp, mineral, light zesty lemon citrus, light yeasty banana palate. Medium to light bodied with average carbonation. Nicely sessionable.

Tap at Awashima Souko. Hazy gold with just a tiny bit of head that lingers throughout. Wheat-forward nose with some light tartness, lemon, white grapefruit, pith and light tropical hops. Good carbonation and creamy on the palate. Some herbal notes, coriander mostly, with good hop bitterness. Excellent wheat ale and very reminiscent of the season. Tap at the brewery. Pretty, deep pastel gold, cloudy, with a thick, fine head. Rather plain nose, wheat, light esters. Rich wheat malt flavor, bread, some biscuit, light citrus hopping, orange. Crisp and refreshing.
