The world of beer is incredibly rich and divers. We want our beers to echo that diversity. We want to pair tradition with innovation,we respect our Belgian roots but we also keep track of evolutions in Belgium and abroad, Our brewing installation was custom built for us to enable us to go wide in beerstyles en wild in our experiments. From blonde to dark, bitter to sweet, malty to hoppy, fruity or roasted, quaffable or sturdy,…anything goes. We started our very first ‘brewmonth’ with a pale ale, afterwards we brewed a farmhouse tripel, aWest Coast IPA and a Baltic Porter. We immediately set the tone for what you can expect from us, a trip around the world in beer. Sometimes quite familiar, other times surprisingly new but always worth the travel.

Hazy dark brown, thin, tan head. Aroma of blue plum, brambleberries, malt vinegar, soggy toast, wood, milk chocolate, vanilla, pistachio, leather. Taste has sourish unripe plum & brambleberry, sweetish fig streak underneath a malt profile of sourdough-type brown bread & nuts, some funky malt vinegar on the side. Tart finish offering dried fruits & berries, tannic notes of wet wood, soft vanilla & bourbon alcohol but remaining low-key. Medium body, oily texture, soft carbonation. The BA does add some smoothness and accents to the base beer, but not necessarily much more complexity (at least not at this young age). A side-by-side tasting would have been more interesting, of course.

Clear golden, thin, frothy, off-white head. Aroma of corn syrup, plum, honey, banana peel, bread dough, yeast, vague vanilla. Taste has sweetish apple, plum & unripe pear in a cereally, doughy, and noticeably corn-like malt body, bit spicy-yeasty. Soft grassy hops in the finish, lingering yeast, yellow fruit & corn. Medium body, creamy texture, average carbonation. Very smooth (as desired of course), and cleanly executed. Interesting choice of style too.

Can from Delhaize at Dok Noord. Hazy yellow, stable, frothy, white head. Aroma of mandarin peel, yellow grapefruit, unripe pineapple, grass, white pepper, bread crust. Taste has sweetish mandarin & apple, sourish citrus zest and spicy, yeast notes in a dry-bready malt body. Dry, bitter, grassy hoppy finish, slightly herbal & grapefruity but not outspoken aromatic. Medium body, slick texture, soft carbonation. Straightforward bitter Ale; okay.

Clear to hazy yellow, stable, foamy, white head. Aroma of honey, green apple, daisies and other flowers, melon, dough. Taste has sweetish apple & melon in a honeyish, bready malt body with raw grainy edge, adding bitterness. Lingering bread crust, grain and flowers in the somewhat grassy hoppy finish. Medium body, slick texture, average carbonation. Unusual brew that demands a revisit, and that's not a bad thing.

Hazy yellow, thin, white head. Aroma of wheat, bread crust, lemon peel, artisan lemonade, soap. Taste has sourish lemon, citrus flesh along wheaty & bready malt notes, leading to a softly floral hoppy finish that has mosty lemon and lemon-scented soap. Medium body, slick texture, average carbonation. Pleasantly fresh but not much more.

Hazy orange, small, frothy, off-white head. Aroma of mango, grapefruit peel, biscuit, peanut, unripe peach. Taste has sweetish peach, unripe pineapple and orange in a biscuity, bready malt body. Piney hoppy finish offering bitter grapefruit and unripe stonefruit. Medium body, oily texture, average carbonation. Dok once again showing their skill in this style.

Hazy ochre, small, foamy, white head. Aroma of wheat, raw barley, bread crust, nutmeg, clove, green banana, apple. Taste has sweetish apple, banana & plum over a wheaty, bready malt base with spicy clove & nutmeg notes. Grassy, slightly floral hoppy finish, lingering yellow fruits and clove. Medium body, slick texture, average carbonation. Solid interpretation of the style.

Hazy yellow, stable, frothy, white head. Aroma of melon, spruce, spring onion, pear, lime zest, orange peel. Taste has sweetish melon & apple, sourish mandarin and a spicy note over a firm bready malt base. Bitter, crisp, piney hoppy & grapefruity finish, lingering unripe citrus & zest. Medium body, slick texture, average carbonation. Would have expected it yeastier (and 'dirtier') but this is pretty solid, just easy-going.

Hazy bright ochre, small, foamy, off-white head. Aroma of unripe peach, mango, lime zest, grapefruit peel, tangerine, lychee, spring onion. Taste has sweetish peach & mango, sourish citrus zest over a bready, cracker-like malt body with a spicy onion note. Floral & piney hoppy finish offering dry & bitter citrus pith & stonefruit and gentle lychee. Medium body, slick texture, fizzy carbonation. Pretty good and assertive.

Hazy bright red, stable, foamy, pinkish head. Aroma of raspberry jam, strawberry, red berries, rhubarb, fruit cake, wheat, vague blood orange. Taste has sweetish-sour raspberry, strawberry & citrus, note of earthy rhubarb over a biscuity, yoghurty malt base. Tart, red-fruity finish, lots of raspberry jam & coulis lingering, faint rhubarb. Medium body, creamy texture, soft carbonation. Balanced 'pastry', all in all pretty straightforward still.
