The world of beer is incredibly rich and divers. We want our beers to echo that diversity. We want to pair tradition with innovation,we respect our Belgian roots but we also keep track of evolutions in Belgium and abroad, Our brewing installation was custom built for us to enable us to go wide in beerstyles en wild in our experiments. From blonde to dark, bitter to sweet, malty to hoppy, fruity or roasted, quaffable or sturdy,…anything goes. We started our very first ‘brewmonth’ with a pale ale, afterwards we brewed a farmhouse tripel, aWest Coast IPA and a Baltic Porter. We immediately set the tone for what you can expect from us, a trip around the world in beer. Sometimes quite familiar, other times surprisingly new but always worth the travel.

Rye session IPA with Citra, Sabro and ('cryo') Azacca, can from De Hopduvel. Gusher, unpourable without filling the glass with foam; the result is a towering high, egg-white, bath foam-like, rocky, tightly cobweb-lacing head, very slowly diminishing over a hazy straw blonde beer with pale beige-ish tinge. Aroma - if initially blocked by that huge amount of foam - of moist white pepper, dry white bread crust, wormwood leaves, dried grapefruit peel, clove, green apple peel, hints of white soap, unripe banana and unsugared chewing gum. Fruity onset in a dryish way, unripe banana again, some green pear and light unripe pineapple perhaps, medium carbonated with refreshing minerally effects lingering through a cereally pale malt graininess with added (dimly spicy) graininess from the rye. Retronasal aromas of grapefruit peel, wormwood and green bitter weeds, coupled with a long-lasting drying and earthy hop bitterness, dominating the finish but matching well with the spiciness from the rye. Dry, quenching and well-made apart from that exaggerated foam development during pouring - but certainly a kind of oldskool session IPA I can enjoy.

Cold IPA made with 'Phantasm', which is apparently an extract made of New Zealand grape skins (developed by brewers and not wine makers, mind you), rich in flavours that are supposed to enhance the tropical effects of certain postmodern hop varieties - and from what I heard, one of the 'hottest' new topics in IPA brewing. Can from De Hopduvel. Thick, very large-bubbled and frothy but stable, snow white, cobweb-lacing head, clear pale yellow blonde robe with near greenish tinge and light sparkling, turning misty with sediment. Aroma of lychee, lemon-flavoured sparkling water (Spa Citroen), demi sec wine, honeydew, corn (water), green apple, pear, lime, starfruit, white peaches. Sweet onset, lots of lychee flavour from the start, hints of starfruit, yuzu and ripe apricot, softish in carbonation with soft, smooth mouthfeel; some corn-like slickness paired with cereally pale maltiness, until indeed a sweet white grape element (Sauvignon Blanc) shows up, possibly representing the Phantasm and coupled with a strong lychee- and melon-like hop aroma. The bitterness turns out quite leafy and long-lasting, adding body and accentuating the fruitiness. That Phantasm thing does add a sweet white grape effect as well as a strong lychee effect, both having been achieved by New World hops as well - so one can wonder why brewers rave about it so much these days; in fact, I think it adds an odd perfumeyness (sweet white grape in an artificial kind of way) on top of the hop aromas which seems a bit, well, unnecessary. This probably would have been just as good, who knows even better, without this one expensive ingredient...

A: cloudy red, pinkish head.
A: raspberry juice & jam, unripe strawberry, sour cream.
T: sweet-sour raspberry, yoghurt, jam.
F: tart berry finish, softly bitter berry pits.
P: medium body, slick-watery texture, soft carbonation.
Clean but simply less convincing as the 'little brother' of Frambo VI.

A: clear golden, small, off-white head.
A: banana peel, apple, clove, french fries.
T: sweet banana, pear, dough, wheat.
F: peppery hops, spices, yellow fruit, soft jenever-like alcohol warmth.
P: medium body, oily texture, average carbonation.
Perfectly acceptable Tripel.

A: hazy red, small, foamy, tan head.
A: 'kramiek', raisin, red apple, sour cherry, vanilla, marzipan, blackberry.
T: sour cherry, plum; sweet brioche & almond, malt vinegar.
F: tart cherry & stone fruit, woody tannins, funky grape, vanilla.
P: medium body, moussy texture, average carbonation.
Lovely, looking forward to a revisit.

33cl can, BB 21/11/2023 dégustée au Bar Rebel, Ixelles. Étrange que rien indique qu'ils ont cette bière de disponible, surtout avec une date d'expiration qui se rapproche.
Dorée, pâle, col crémeux blanc bien tenace.
Arôme est frais houblonné avec un bouquet plaisant tropical dont le classique Talus et son apport de noix de coco, je retrouve une petite note d'agrumes et de pin résineux avec un appui malté pâle plaisant.
Palais est bien houblonné pour une APA, tropical dont la noix de coco sans être surfait, touche de pin et de résineux avec une bonne rondeur en bouche venant de l'avoine. Le côté malté en fin de bouche procure un caractère grillé léger et une sensation de 'haze' se fait aussi sur la fin.

Une APA classique bien ficelée.

Clear dark brown beer, solid creamy beige head, stable, a bit adhesive. Aroma: sweet impression, dried fruits, alcohol, oxidized, decent roast. MF: soft carbon, medium body. Taste: good roast, bitter, alcohol, very dry, a bit spicy, some coffee. Aftertaste: caramel touch, coffee, pretty bitter, cocoa powder, bitter, more oxidative notes, spicy finish.

Pretty clear dark brown to black beer, creamy beige head, little stable, non adhesive. Aroma: good roast, coffee, dark chocolate, malty, grains. MF: ok carbon, medium body. Taste: bitter start, malty, grains, hoppy, a little sourish. Aftertaste: roasted, bitter, dry, decent.

Pretty clear blond pale yellow beer, small creamy white head, little stable, non adhesive. Aroma: very malty, grains, banana peel, cow fodder. MF: ok carbon, medium body. Taste: lots of sulphur, bitter touch, herbal, a bit spicy, grains, soft acidity, fruity, some apples. Aftertaste: a little bitter, apples, sourish, hoppy, grassy, ok.

Was very lucky to spot on Untappd that the last half keg was being tapped, which was a leftover from somewhere.
Clear blond yellow beer, creamy solid white head, stable, adhesive, leaving a nice lacing in the glass. Aroma: a bit malty first, fruity, quite some banana, grains, sweet impression. MF: ok carbon, medium to full body. Taste: a bit yeasty, some banana, good bitterness, a bit grassy, pretty dry, banana peel. Aftertaste: very hoppy, very bitter, grassy, a bit piny, dry finish. Decent Tripel!
