The world of beer is incredibly rich and divers. We want our beers to echo that diversity. We want to pair tradition with innovation,we respect our Belgian roots but we also keep track of evolutions in Belgium and abroad, Our brewing installation was custom built for us to enable us to go wide in beerstyles en wild in our experiments. From blonde to dark, bitter to sweet, malty to hoppy, fruity or roasted, quaffable or sturdy,…anything goes. We started our very first ‘brewmonth’ with a pale ale, afterwards we brewed a farmhouse tripel, aWest Coast IPA and a Baltic Porter. We immediately set the tone for what you can expect from us, a trip around the world in beer. Sometimes quite familiar, other times surprisingly new but always worth the travel.

A white sour IPA, or sour white IPA if you will, by one of the two most prolific brewers in Ghent. Papery lacing, snow white, mousy, medium thick, slowly opening head, cloudy apricot blonde-yellow robe. Aroma of lemon flesh, sourdough, green onions, shallot, grapefruit juice, unripe mango, sweaty touch, some lychee. Lime-like, crisp and light sourness in the onset, very bright, starfruit and lemon aspects, fizzy carbonation fit for the intended style; light wheaty soapiness and breadiness, very supple, carry this refreshing and colourful sourness to a drying finish, where the acidity seems to increase a bit, meeting a retronasal mango- and lychee-like hop aroma - not too strongly so, but enough to maintain the IPA aspect of this hybrid. A late, grapefruity bitterness even pierces through the very citric, bright, juicy sourness of this beer. Very zesty, crisp and immensely quenching on a hot summer day, with enough (new) hop character to qualify as an IPA indeed; see e.g. BBP's Tough Love for comparison within a Belgian context. Lovely Dok brew, one I would certainly drink again next time I make it again to that awesome place.

Alsof je gesuikerde hopsiroop drinkt. Niet per se slecht, maar doe gerust 3 stapjes terug en maak een ouderwetse Amerikaanse double IPA.

24/07/2019 - small draught glass @Barboteur. Black colour, white head. Nose is licorice, bit roast, fruity hops. Taste is malts, bit roast hint of licorice, nice fruity hops, bitterhops ending

Utlenione, mimo ze nie takie stare (poltora miecha), do tego landrynoprzejrzale tropiki, w uscie bardzo slodko, pelno, mocno nieprzyjemna, krzaczorowa i dluga goryczka... no nie, moersleutel w ciemne piwka idzie lepiej. Z zalet: alko spoko schowane

25 June 2019. At Dok Brewing Company, Ghent. Shared with Anke. Pours hazy brown with a quickly thinning, tan head. Nitro? Aroma of cold coffee, fondant, chestnut, toast, biscuit, dried fig, earth, tree bark. Taste is light malty sweet, restrained dark fruits, a bit chocolatey, slick & soft nuttiness going over a roasted bitter core of earth & coffee ground. Dryish, toasty, herbal hoppy finish, black tea-like with lingering coffee, bordering on mocha. Light to medium body, slick to watery texture, soft carbonation. Apparently the keg was at an end, but then again I would have expected more, certainly to Dok's standards. Too weak all in all, so disappointing, I hate to admit.

25 June 2019. At Dok Brewing Company, Ghent. Shared with Anke. Pours hazy brown with a quickly thinning, frothy, tan head. Aroma of mocha, biscuit, toast, dates, peanuts, caramel, wet wood, earth. Taste is light to medium malty sweet, notes of chocolate & peanut, slick & subtle (dried) fruitiness of date & fig, supplemented by 'bittersweet' mocha, toast, earthy accents & a sourish undertone. Dryish, herbal hoppy finish, toasty, more dried fruits & mocha. Might be 'tropical' but I don't find it too adventurous, perhaps rather clean - however, it's well made... again!

25 June 2019. At Dok Brewing Company, Ghent. Shared with Anke. Pours clear red-amber with a lasting, very thin, pink head. Aroma of blueberries, raspberry, strawberry ice cream, praliné, dough, yoghurt, 'meringue'. Taste is light to medium fruity sweet, lots of ripe blueberries, strawberry smoothie & raspberry note, balancing on soft doughy-yoghurty malts; sour core of wheat, unripe berries & lemon, a bit spicy bittter. Dryish, tart, fruity finish, faint vanilla & cinnamon, lingering berries & yoghurt, slightly earthy even. Medium body, slick texture, fizzy carbonation. Great combination of flavours.
