The world of beer is incredibly rich and divers. We want our beers to echo that diversity. We want to pair tradition with innovation,we respect our Belgian roots but we also keep track of evolutions in Belgium and abroad, Our brewing installation was custom built for us to enable us to go wide in beerstyles en wild in our experiments. From blonde to dark, bitter to sweet, malty to hoppy, fruity or roasted, quaffable or sturdy,…anything goes. We started our very first ‘brewmonth’ with a pale ale, afterwards we brewed a farmhouse tripel, aWest Coast IPA and a Baltic Porter. We immediately set the tone for what you can expect from us, a trip around the world in beer. Sometimes quite familiar, other times surprisingly new but always worth the travel.

One of Dok's countless IPA variations, fermented with a kveik yeast strain, containing buckwheat and oats and hopped with five different New World hop varieties. Can at De Welkom. Thick and dense, egg-white, stable, firm head, cloudy apricot blonde robe with orangey tinge. Aroma of grapefruit zest, orange pith, ripe mango, yellow kiwi, armpit sweat, overripe onion, hints of lychee, green melon, Betterfood, beurre noisette, meringue, toasted peanuts. Crisp, cleanish onset, hints of orange, melon and papaya but nowhere too sweet, sharp minerally carbonation steering it further away from a NEDIPA (but of course it is not really intended as one), full and slick body; cereally maltiness with indeed buckwheat graininess as well as oat velvetiness both recognisable, a tad biscuity further on and soaked in dank, sultry, tropical hop aromas varying between grapefruit juice, overripe onion, lychee and kiwi, but also providing a long, very zesty, eventually grapefruity, quenching bitterness. A 'mountain DIPA' of sorts, heavily inspired by NEDIPA but still offering a crispness and serious bitterness I would associate more with the West Coast - most importantly though, this is a cleverly constructed, very rewarding IPA and one I definitely need to revisit.

Another recreation of the 18th- and 19th-century 'uytzet' beer native to Ghent and its surroundings, first revived by Paeleman in the nineties but done in a more credible way by Dok in recent years. Cheers to Janos for this one! Egg-white, moussy, medium sized, stable head, misty amber-hued warm orange blonde robe. Aroma of dried apple peel, straw, dry bread crust, unflavoured potato crisps, dried pumpkin, thyme, young mugwort, stale rusk, dry earth, turnip. Dryish onset, relatively low in esters, some persimmon, unripe peach and apple peel notes, lively carb with rounded bready malt core, rusk- and toast-like edges and a vague sourish undertone; phenolic touches of clove and thyme in the end, blending into an earthy and florally hop bitter finish further accentuating the overall dry character of the beer, the bitterness lingering pleasantly without overpowering. I was not around when the original uytzet beer had its heydays of course (neither was Dok), but this seems like a modern interpretation of it, with a certain saison-ish streak to it; interesting nod to the past, and if one brewery has the moral obligation to do this for historic beers in Ghent, it is of course Dok.

The first barrel aged version of Dok's Baltic Brugse Puurter (a maple syrup flavoured 'free' interpretation of Baltic porter) but probably not the last. From tap De Welkom, Dok's new pub in the city centre of Ghent, replacing the former Brouwbar. Dense and creamy, yellowish beige, stable, firm 'nitro' head, black robe with ruby red edges, clear. Aroma of black coffee, dry caramel, burnt wood, bourbon, dried rosemary, molasses, haemoglobin, minerals, crushed black peppercorns. Sweetish onset, dried fig and date, light black olive-ish umami touch, soft carbonation - very small-bubbled with creamy effect, from the nitro tap of course. Full-bodied, toasted-nutty, molasses- and hard caramel-like maltiness with a bitter roasted chicory-like roastiness to it, but also creamy sweetness from the maple syrup and vanillin-scented oak wood from the bourbon barrels. The bourbon itself accentuates the bittersweetness without overpowering it, while its alcohol gently warms the throat without scorching it. Deeply malty like the base beer, with the bourbon barrel ageing applied in a rather subtle way especially to contemporary standards - lovely.

Magnificent purple-cardinal, clear beer, with a small almost magenta-transparant head. Pinot Noir to the stars! Fruity, vinous, the blackcurrant (and blueberry) exploding in the finish of the nose. Sour, billberry, cassis, and indeed, dark blue grapes. Call it Pinot Noir without hesitation. Vinous complexity, marrying perfectly with the tart berryflavours. Refreshing fruitacidity, mild (but adequate) carbonation, velvety texture, lipsmacking acidity, some acidthinning. A tour-de-force from DOK. Worth the regretted Mikkeller Baghaven gems. Guys, chapeau!

Fairly aged sample Towering, lightly yellowish head over hazy yellow to orange beer. Citrus, laurel, orangeblossom, hint of salicylic acid. Oxydation, aged hops, dried citruspeel. Slick, dry MF, good carbonation. Aged, exactly what one ought not to do to a W.C. IPA, of course. Still pretty decent for this kind of thing. Txs to Stef!

A: hazy dark golden, small, off-white head.
A: hard caramel, biscuit, cranberry, apple peel, artisan honey.
T: sweetish red apple, bitter cranberry, rye, hard caramel, dry biscuit.
F: dry, herbal hops, rusk, rye.
P: medium body, slick texture, average carbonation.
Interesting at this ABV.

T: sweetish apple, bread crust, sourish wheat & vague berry.
F: grassy hops, bittersweet barley, starch.
P: light body, slick texture, average carbonation.
Clean & adequate; but why necessarily the contradiction in terms of a 'Low ABV Festbier'?

Cloudy black, stable, foamy, beige head. Aroma of beef stock, black olive, soy sauce, espresso, whisky cream, tobacco, shoe polish, coffee liqueur, 'noir de noir' chocolate. Taste has sweetish dried fig & raisin in a dark-chocolatey, toasty malt body with lots of underlying umami olive & beef stock, complemented by bitter espresso & earth. Earthy hops in the finish, lingering bitter coffee grounds, tobacco and warming whisky-like alcohol. Full body, oily texture, average carbonation. Classic Imperial Stout, ideal for the BA versions to come.

A: pomelo, lime zest, cheese, yeast, unbaked bread, birdseed.
T: sweetish apple, sourish pomelo, bread, herbs.
F: herbal & grassy hops, citrus zest, yeast.
P: medium body, slick texture, average carbonation.
Quenching and adequately dry.

Draught Huge, dense, white head over veiled pale yellow beer. Bit dusty, and definitely watermelonpeel. Smell really like cutting the melon. Bit rubbery as well. Very true... watery... fruity flavour. It IS watermelon indeed. Faintly mineral. Feels a lot better carbonated than it looks. Light body, appropriately, refreshing. Nice in fact. DOK seldom disappoints.
