In 2008 Mark Bailey harvested a bumper crop of apples from his small orchard in Carlton, OR, and the idea formed - start making hard cider! Recruiting his wife, Jennette, his son, Keenan, and family friend Allen Gould, the foundation of Slake Cider was created. At that point there were very few cideries in Oregon (actually only 2 others). We had little idea how quickly the market for cider would grow.

Our original goal was to create traditional English ciders that were approachable and enjoyable for the cider novice. Today we stay true to that objective by crafting a wide variety of ciders and perries; some dry, some sweet, some traditional, some modern. However, some things never change - we always use fresh juice and fruit in our fermentations and never add concentrates, water, extracts, flavorings (natural or artificial), or other additives.

Our orchard has been expanded from a few dozen trees in 2008 to over 4000 trees as of spring 2019. Primarily we grow traditional English and French cider apple varieties, with some American heirlooms and a few traditional English perry pears.

Tap @ Schilling Cider House, Portland. Clear pale yellow appearance, very light apple fruit, pleasantly sweet with a soft acidity, expected a little more depth of flavour and wild funk, but it's nice enough.

Lightly tart apple with a bit of oak, vanilla, with lingering tart apple. Some whiskey. Medium bodied. Bold without being overly strong. Nice.

Bottle from Made in Oregon. Free shipping? Sure. Fluted tulip.
Amber bronze sort of color. Settling, settling, settling... clear. Flash of head. Active, if a bit sleepy.
Interesting, almost briny nose. Iron-y Kingstons are very recognizable. Lots of floral skin. Sweet pommeau. Charred vanilla.
Moderately acidic, lacquered texture. Bittersweet, leafy, very minerally. Peppery? Lingering woody/steminess. Char. Tart, very dry finish. Minor sulfite headache. Warming alcohol. Weak carbonation is it’s only fault. Some bold bubbles & this could easily get propped in a 750 for coin.
Very tasty.

Stubby half liter bottle from Made in Oregon. 6.25%abv on the label. Clear, bright, pale gold body. A struggle to get any fizz on the pour. Lots of green/biting apples & a touch of sulfur on the nose. Mildly yeasty. Sweet & tannic taste. Very curious. Reminiscent English sort of flavor. Sweet & sour flesh, coarse skin, wood pulp, hay, brine?. Middle-high acid. Lingering tartness & stems on the finish. Fleeting carbonation. Damp texture. Mellow/tolerable sulfites. Pretty fun.
